When I skin my fish I put the fillet at the edge of the fillet board, that way when you skin your handle is off the side of the board so you don't need to flex the blade, I think it would have worked really well for the dexter, I can fillet and skin a fish with a chefs knife if I have to

I use the dexter an do 1000s of a salmon and other fish a year and also use that technique of handle off the table

One gigantic difference is that the Dexter is a hollow ground blade and the bubble blade is a flat ground . I own both but the Bubba blade has a distinct advantage from that feature alone, for lifespan of the blade and also sharpening and also for how the blade performs on certain cuts. Another thing you need to consider is when you’re cutting the different sides of the fish you always tend to favor one side over the other for the ease of cutting and your coordination if you’re right handed versus left handed. One thing you might want to try just to see if it works better for you when you’re skinning the fish try setting the fillet right along the edge of the table so flexing the blade isn’t nearly as important. The first side of the fish that you skinned , you did a great job even better than Rob Arrington. He’s a great guy but he leaves a little bit too much reddish meat on the finished fillet. The reason that you had more trouble scanning the second side with a dexter blade is because the dexter is hollow ground. That particular Dexter blade you were using the hollow ground starts halfway along the full edge of the blade. It is made from flat steel that they simply just grind a edge on. Now if I could find a flat ground blade that Dexter makes it would be a superb knife! 😊

I own both, in 9" narrow blades. I've used Dexter Russell for over 30 years now, and have had my Bubba for 2. Both are excellent knives, and I give the handle award to Bubba! But, ALL knives lose steel when sharpening, and I fish a lot! My oldest Dex Russell has a 1/4" wide blade now from years of sharpening. It's used best on thin fish where I need to save every inch of edible meat! I agree, that all considered, Dexter Russell is a deal! Bubba's are great, but at their price, I keep 3 sharp Dex Russell's on the dock when I clean fish!

When skinning I like to move the flesh to the edge of the table that way the knives stays naturally flatter

If the blade feels a little too stiff, slide the fillet over to the edge of the table so you're not having to bend it nearly as much to keep the blade flat against the table.

I always use two blades, one for cutting through skin and scales the other "flexible" to skin. You need both. I really like the Rapala 6" flex cheap and work great...they also float.

You da man Heath!! I have a Bass Pro knock off version of the Bubba Blade, which isn’t too bad. But, I watch a couple other You Tube fishing channels that are sponsored by Dexter and I haven’t seen a comparison on that channel quite like yours. I’ll be getting a Dexter real soon!! Great as always brother!!

A great video. It was apparent you moved through the dolphin fillet with much less effort using the Dexter knife. I totally agree, all things considered, the Dexter outweighs the Bubba knife. Thank you for an objective comparison. Your video was very well done! Major Tony

Hi Heath, Good review of both knives. The softer the blade steel the more flex you can get, but it won't hold an edge as well as a harder blade. If the Rockwell hardness is too hard, the blade won't flex. There's a trade-off between flex and edge retention. It pays to sharpen any knife blade fairly often. I guess you have to pick the blade that works best for you. Thanks, Mickey

Great video, I have a few dexter knives that I've been neglecting, using more expensive Victorinox 6' boning knife to filet, & skin, always liked the Dexter for the value. Much respect to Dexter!

Dexter!! All day everyday. I even like their "traditional" line. The price is right and if you understand that knives need to be maintained and sharpened regularly, no comparison. Honestly...if you don't have an angled Russell oyster knife in your knife cabinet...good luck!

Dexter offers a flexible filet knife also. I have one along with the stiffer blade and it's my favorite knife along with the Dexter 8" butcher knife. We used Dexter knives when I worked in a few restaurants some 30 years ago. For the money it's hard to beat them. I have knives worth 5 to 10 times as much but keep pulling out the Dexters when I really need to break things down.

Both good blades. I prefer the dexters. At $11 that’s a steal for a sanisafe. Paid $30 for mine. Been switching all my cleaning and kitchen knives over to the sani-safes

I have been using Dexter Russell knives for 30 plus years, I use them for fish, in my kitchen, and for cleaning deer. They are the best knives and have a reasonable price. Thanks for making a video that promotes the best product!

I'm a mest cutter, I use the Bubba blade and Dexter knives, the Bubba blade non slip grip is unmatched, but harder to sharpen, both great knives.

I fillet my first fish a couple of days ago and butchered it with some dexter I got at my local restaurant store. It was labeled as a boning knife, but was flexible enough to be a fillet knife. It was ok working with it, but it wasn’t very sharp and I don’t have a wet stone haha. I might either get a wet stone and work up to a bubba or maybe a better dexter. Either way, I really enjoyed filleting the fish, despite how much I butchered it. It was a flounder, just in case you were wondering.

Thanks a million for watching and sharing your story. I've been filleting fish for almost 40 years... And every so often I get sloppy and do a little butcher job too... It happens. As far as knife selection, it's a personal touch thing. Some folks love the bubba blade, cuda brand, Forschner, rapala, mustad, tsunami... There's a wide selection out there. My Dexters have lasted years with virtually no trouble. BTW flounder are little more tricky to fillet than some other fish. Congrats on you first fillet job, and many more to happen. Can't beat a titanium nitrade bubba, Dexter have bad edge retention but are dumb easy to sharpen in turn, both are great in the right hands!!

I have an assortment of both blades from both Dexter and Bubba. I agree with this review. The Bubba is bulky and at times, I like the Bubba blade. But I tend to go for the Dexter more often. It is simpler, more comfortable, and cuts better.

Great video sir! Might I suggest checking out Dexter's sub company, Dexter Outdoors. I think it was created to compete with Bubba Blade. Me personally, I've been cutting fish for 10 years with Dexter. My current kit is two 8in wide curved fillet, 10in breaking, 10in wide skinning and a few random knives for special jobs. Good video ,,, I have tried both knives ,, I own both knives ,, not really sure the price difference is such a big deal when you compare it to what I spend on fishing ,, big picture ,, so which knife do I like the best ,,, if both knives are laying there and I can pick up either knife to do some fish cleaning ,, I am picking up the Bubba knife ,, that handle is sweet ,, so the Bubba knife would be my knife of choice ,,

Great video but why would you not filet the fish the same way with the same angles? When you used the Bubba you came in from a weird angle vs having the fish positioned like you did which made it look easier with the Dexter. I have 4 of each knife. Just saying.

First off there is a big difference between fish breaking knives and fish cutting knives. "Breaking" wise some fish are tough on knifes and require more weight. other species like Salmon require a very delicate extra sharp blade so you don't break the grain line of the fish. Once fish are broken down , then you have (fish cutting knifes) such as those for sushi where a Global knife to make paper thin cuts may be needed. Pro on Dexter whites is very cheap and effective so you can lose one or two and it won't break the bank, Con they dull kinda easily given the material they are made of. Bubba Blade wise if used correctly they hold a edge pretty good but the handles are different and require some adjustment learning to use properly. Plus you need the right size for the fish species your cutting. Non slip handle is the key feature on a bubba Blades so you don't make (fillet of finger). Was also going to mention many who "Break fish" use a protective glove as a back up to add stability and there handy when dealing with slippery fish,sharp spine species and those with sharp teeth.

Not the biggest fan of either of these particular knives. Much prefer the non stainless Dexter Russel knives. They are wooden handled which is nice and the blade itself is considerably better to me. I'm not spending $50 on a Bubba Blade. That's insane to me.

They do have a factory in Japan where the Basics series is made, but that's only a small percentage of their knives. Thanks again for the support. Take care ;)

No I haven't put them through any actual tests the only test is really the test of time and filling hundreds of fish with both of them cutting through bones scales and the ever so often rubbing against the wood fillet deck which is the general wear and tear on the knife. Ol Chicago cutlery to the the dex the wood handles I like so we made a roll for the hog processing on the fly And the dex rus in the kitchen momma can just put in the dishwasher done. And the colors of the handles she’s 70 so a bright color works for her.

I agree that both are great knives when they are new. Try leaving both in a saltwater boat for a couple years. My experience is that the dexter will rust and leave stains in your leaning post box and the bubba will not. The bubba will retain its edge in a saltwater environment and the dexter will not. If you keep your fillet knives in your boat like me the bubba is worth the price. If you filet your fish at home the dexter is probably better because of the price.

I know the industry uses Dexter knives. They have a huge line of NSF rated knives they just take so much abuse and for day in day out work these are just unbeatable for the price and they are made in the USA. Dexter knifes are for the working pro who has to cut all day and minimizing fatigue. Also DR has some fine filleting knifes as well.

Good video. I'd try to avoid the gut on dolphin at all costs though. Dolphin insides are known to be among the worst in the ocean.

I would say though, the key to any of these knives is how easily they sharpen. Neither of them will hold an edge all that long, they're made of very soft steel. Guys who clean tons of fish like the Dexter's for their cost. They get so many sharpenings out of them until the geometry is gone then they chuck them. The same as butchers. I don't know about the Bubba blade, but given it's also super soft steel, I'm sure it will only last so long before you'd have to regrind the entire knife to achieve the desired angle. For $50+ I'd expect much harder steel than the Bubba blade has, that's why I don't own one. For that type of money you can buy a proper, 58+ rockwell knife.

I own bubba knife and two Dexter's they are both good but for the money Dexter is the smart buy and I own another Japanese knife that I have been using for over 30 years the name has wore off it is better than any knife I have ever owned

For the price and value Dexter is definitely one of the best on the market. But obviously there are other brands that out perform them. Some constructive criticism: Appreciate the video, but it took almost 4 minutes to get to the demo and the intro is too long. I may suggest getting to the point (no pun intended) quicker and having a shorter intro (5 sec max). For people like me who are looking for the best knife it definitely helps if reviewers get straight to the point. Otherwise good video!

Just ordered a bubba filet knife after watching this, tired of fileting with my cheap knives. 50 bucks ain’t a whole lotta money for something that’ll last anyways.

Why don't you clean as yo go yr fillets are all in the blood then you will hav to wash with fresh water apart from that good vid

Never rinse your fish with fresh water until you are ready to cook it. It turns it into mush.

for me, the Bubba grips much better when wet, and the flex is so much more controlled... but it's more expensive... I do think Dexter knives should be in your bag though...I love the white grip...and it's much easier to clean...and of course the price is unbeatable. However, the Bubba Tapered knife beats both of these.... the blade is wicked narrow, razor sharp and ultra flexible....

@@ed2335 Bubba has a coated blade, they say coated to keep the meat from sticking, but really, it has to be coated if it is carbon steel, or the rust and oxidation would be out of hand. Which means...the fine edge of the bubba is always in threat of erosion, how that pans out, we will see as I recently purchased a stiff 9" Bubba. Good side is, the carbon steel will most likely hold up well to heavy meat cutting due to the characteristics of the carbon steel, meaning, a carbon blade is less likely to chip or break than you harder stainless blades (however victorinox's own in-house stainless is amazing, I'm bias since I use to work under Victorinox contracts). That being said, I've broken two carbon steel blades, by Ontario Knives, but the number of SS 420 Aus8, and 440 chipped edges is numerous. And the handle on the Bubba undoubtedly would cost more to make due to dual colors, more material, more production time, more expensive material (suppose to be less slippery than the dexter when wet, and the Bubba is indeed less slippery (I have a dexter too). I think what we see is that one is more commercial, and the other is more personal. Or, the Bubba lends itself to more FIELD use, whereas the Dexter would be better suited to professional, kitchen, butcher use. Let's not forget as cumbersome as the Bubba's handle may, or may not be, it is indeed more protective of the user in grip, and guard, and that could be of a greater importance when 200 miles out on the Gulf Stream cutting bait on a boat that likes to move, etc. Bubba also has a lanyard holes, which you can attach a coil lanyard to, so when your gutting off the side of the boat, and the fish says hell no, smacks the knife out of your hand, you don't drop it overboard into the abyss. Lastly, the Bubba comes with a sheath, a sheath that you can actually use outdoors on the belt. Oh.. price setting, as someone in the industry, I can tell you, the price is what someone is willing to pay for. There are several obvious factors that go into that, material cost vs production cost vs demand (marketing?) is the common formula.

Ed cost of marketing and commissions (ie spiff) because Bubba Blade is made in china. Dexter is a worker tool they don’t spend much on marketing because they sell tons to those in the industry in addition they are an integrated company, everything is made in the USA including the dexsteel. Not only that they are NSF certified as well.

Thanks a million for watching. I've used many different methods of filleting and skinning over the past 30+ years... The way I showcased is just what I'm comfortable with, it gives me a nice clean slab of meat. I guess it might just be a case of "old dog, new trick" syndrome. Thanks for sharing. Take care ;)

Not trying to sound like an a$$ but you do a lot of cutting back towards yourself. Be careful man. Im a medic on the gulf coast and have seen some bad cuts with some really bad from guys cutting back towards themselves while filleting fish. Your review was great though. I use Dexter fillet knives mostly except for my vintage Uncle Henry.

Totally agree with Bubba blade being crap. Dexter are a little better but if you want a great knife do yourself a favor and get a victorinox 6 inch semi stiff blade boning knife. I know it says boning instead of fillet but there's no beating that knife in sharpness or comfort in your hand. Butchers and processors use it for a reason.

@@ralph9987 yes sir those are great knives. I just can't bring myself to buy anymore expensive fillet knives after dropping a couple overboard. I keep taking them out on the boat with me incase one of those blackfin footballs wants to become a sashimi lunch.

Bubba blade knives are made in China, and Dexter blades are American made. Theres no reason they should be charging almost 4x more for a Chinese knife than Dexter does for American made cutlery. They are obviously charging way too much, they could afford to give you more for the money but it seems you're really paying for the rubber handle.

Not everybody's flexible blades to fillet fish look at the Japanese and other Asians. Chinese people filet fish with large meat cleavers.

The Bubba blade can be reworked with a sharpening jig from the 22.5 degrees it comes from the factory with to the 17 to 18 degrees of the Dexter and you will have the benefits of both knives, whereas the Dexter cannot be made more flexible.
