On the contrary, Brick belongs to the tower, so he doesn't need to change. Also, just because it's Pikachu doesn't mean it's Ash. Pikachu and Eevee are 'rival mascots' at this point (Let's Go Pikachu and Let's Go Eevee), so it makes sense even without Ash. That being said, it is my understanding that this Eevee is a reference to a specific animated series online, and there is a human avatar of sorts, so maybe he could replace Mr. Stick.

I got this concept that I thought of a full pokemon pizza tower mod, and I got some ideas for a pokemon to take the role of Pepperman, Pepperman ---> Machoke: I thought this one whould fit because Pepperman has a lot of pounds and charges. So in the starting cutscene Machoke is practicing his punches on a Banette punching bag (my god...) in a training arena , he looks behind to see the pizza-loving Eevee. In the next phase he evolves into M A C H A M P. You have to chivel statues of his previous pokemon opponents like, Hawluchua and Incineroar. and finally he tips and gets covered in devolving spray (yes, that is a real item in the pokemon card game). And turning himself back into Machop, and after one final blow and he gets defeated. Okay, i'm done for now I'll cover some more characters on another edit tomorrow (hopefully) and, yes I'm on a family member's account with baby videos.

Pepperman would probably be Sudowoodo (specifically one trying to become the legendary Truedowoodo) Vigilante would probably be Inteleon (albeit much shorter), due to the whole ‘gun’ gimmick, or a Sobble with an actual gun because he just couldn’t wait. The Noise would probably be some Pokemon that’s become a punching bag for being overrated (eg Charizard, or Charmander if we want to keep the characters of approximately equal size compared to Eevee), which would probably fit with the media aesthetic. Pizzaface/Pizzahead would probably remain the same though, as the trainer for all these Pokemon like how Peppino is supposedly Plume (the Eevee)’s trainer.
