I have the solution! The video does not show that when you ride in the driving school with Mrs. Puff you have to go up to the right on the two trains, there is another coin hidden. I had the 10/11 glitch with Mr. Krabs' move but there was the missing coin on Mrs. Puff.

The coin on Mr Krabs on the train does not need to be collected it is an easter egg this coin never counts. The actual coin is at the checkpoint driving school. The coin that everyone is missing is on the right behind the second train.

La solución es fácil, pasa la misión de nuevo sin usar ningún punto de control de inicio a fin y ve por las monedas aunque ya las tengas y en algún momento encontraras la 11/11 me funciono

Before the Mr Krabs Chase i got 3 coins, but when i get the coin in the train section and look on the map (pressing options) it looks that in the wild west jellyfish fields says that i got 3/11. i did something wrong? (I'm on PS5)

make sure you got the doubloon during the first riding scene. that’s the only one i missed sitting at 10/11

The coin is an easter egg. Get the coin in the driving school and there you go.
