Why after covering over the bricks with stucco did you paint over the space between the bricks? Why not simply leave the bricks exposed?

Here in the USA it would cost about $500 if you did it yourself. $25,000 if you had someone do it for you...

What is he using to stick the tile counter top? Adhesive or just plaster mix. Is he using different mix for the brick work and plaster or just the same all over
