@Beth Little Same here. I just got my mixer and Dutch oven today. Every recipe I've looked at indicates to preheat the Dutch oven so I can't figure out why she didn't preheat the Dutch oven. How did your bread come out?

I make Dutch oven bread occasionally and I'm going to try your recipe. As a tip, put a sheet of parchment paper inside your Dutch oven for the final rise and for baking. Virtually no cleanup at all. To lift out, just grab the corners of the parchment paper. So easy! Thank you.

I made this today, my first attempt at bread. Followed the recipe only subbing fresh thyme for dried, 1 tsp. Came out pretty good! I will bake it a couple of minutes longer next time. My husband loved it!

Wonderful recipe and loved the video presentation for visuals. I am new to bread making and this recipe is easy to follow. My first batch was in a 22 Le Creuset Dutch Oven which was a little shy of recommended 6 quart, so dough rose over lip of Dutch Oven. For second batch, I moved up to an oval 32 Le Creuset (around a 7 quart). Although slightly larger than recommend, it still made a perfect loaf. Thank you for the education!

This bread is THE BEST!!! It has a crunchy crust on the outside and is soft on the inside. It's restaurant quality!! I've made SO many different types of bread, that I was just not happy with, or just turned out "ok". This bread is awesome! I made a garlic one and a plain one that I added bran and flaxseed to it, for my son. Both turned out excellent!!

I'm trying this for the first time with my new Kitchenaide. I didn't have great bread making skills before (nor did I have a Kitchenaide). I think my bread making skills have just improved using your recipe hehehe. I've also never roasted garlic before either. Your easy to follow instructions make all the difference, thank you!!

I tried your recipe today and it was a total success! I had only tried making bread once before and it didn't work out (it was a different recipe). Only thing with this one is I wish the garlic would've been a bit more pronounced but otherwise it was delicious. Thank you!

This was a great video. I learned the joys of dutch oven baking more than 50 years ago as a Boy Scout, baking over coals outdoors, but have gotten away from it for too long; mostly I've just been using mine for wet cooking lately. Time to break them out and put them to work baking bread!

Amy I made this loaf today. It was the perfect combination of water to flour - I added one TB of water only. The dough came together beautifully. After the first rise, I placed it in the dutch oven (using an All Clad 5.5Qt) and it rose again within one hour. I scored it as you did, and I noticed it did deflate somewhat. I would suggest scoring the top before the last rise. It baked exactly as you said, but it was flat topped and didn't seem crisp on the outside. It's a soft loaf. I am going to try it again.

I've been using a plain Lodge cast iron dutch oven and line it with parchment paper and sit the dough on that. No mess at all afterwards as I just grab the paper and lift the loaf straight out of the dutch oven.

This is the best bread I've ever made, few tweaks though. I let it rise 3 hours the first time, an hour the second time and used a 5 QT Dutch oven. Since I didn't have roasted garlic I used 2 T of jarred rosemary and 1 T of sugar to the dough. My dough was a tad difficult to score before baking but still was a beautiful loaf.

I haven't done a kneaded bread in a long time. It looks wonderful. I don't have a mixer like that, but used to knead by hand. It does make a different kind of crumb from the more rustic, no knead type. It's good for sandwiches, and butter and jam type spreads. I think the holes aren't so large. Anyway, thanks for the video.

Already had my artisan tilt head on order with kitchenaid Australia then I stumbled on your recipe, the artisan turned up yesterday and I've hidden it in the garage from my wife.(didn't even open the box) My new candy apple 6.9 litre proline has arrived today and its in the kitchen kneading as I type. That is a beautiful loaf. I like how it's high enough to be useful for rustic sandwiches. Also I've never baked this kind of bread because the crust was so tough, but your idea of brushing it with olive oil tames the super toughness of the crust. I'm actually going to brush it with butter after baking for the sake of my tender mouth.

@Amy: Greetings from Maine. I just found your channel & looked at your ‘About’ page. I am also on the journey of learning how to cook. Spent my first 38 years in California, where there is many drive through eateries. “Why cook, we can have instant food just 2 min. away”? Well that just lead to very unhealthy eating and morbid obesity. Moved to Maine and the nearest drive through is 1/2 hour away. Now I have no excuse. My first 6 months I used Hello Fresh & Blue Apron to get me on my feet. Now I’m totally learning how to really cook. Two years on, I’ve lost 40lbs just by cutting out fast foods, and I really appreciate channels like yours. Watching someone do something is quite helpful. I do have a question on this recipe: how would you do this if you didn’t have a stand mixer? I have neither a mixer or a bread machine, & $0 to get either any time soon.

Amy, do you find the KitchenAid mixers with the lift bowl and stationary head are harder to add ingredients to? Even more important, is the motor strong enough to knead bread doughs without strain? I make breads and heavy dough recipes and will be buying a stronger machine. I currently have a classic KitchenAid and it's not doing the job. I'm considering the Bosch mixer, not as pretty but I like the strength of the machine and the dough hook better. I really need your opinion before I buy. Thanks much!

It comes out really good in a dutch oven. It makes a crust similar to a baguette but it is soft in the middle.

+Clifton Walker Glad it turned out for you. Thanks for sharing. Using coals for these things is cool, isn't it? Amy likes to keep hers shiny. not sure if the coals would harm the paint much. She'd have to have one similar to yours. What is funny, is she used a 10" diameter one to make the custom bread that I used for buns for my 7 lbs cheese burger.

Just use an upside down cookie sheet. Put a pan of water in the bottom of the oven to get the humidity for a crunchy crust

Oh the wall oven. Yes. Some people complained that my oven and cooktop are old. They just keep going and going. I don't want to replace them because I would pretty much have to replace my whole kitchen.

Is it true you can addd something like a gluten power to all purpose flour and it makes bread flour?

I've lived in East Tennessee my whole life, and the second I saw your video, I THOUGHT I RECOGNIZED YOU! I would love to know if I'm right, but I have no idea how to do that! Your bread looked amazing, by the way.
