Hi. Thank you for this video. Was hoping you could answer this question for me. Once the garlic is in the olive oil and sitting for the 48hr process and then the garlic discarded. Is this now a way of bacteria getting into the olive oil. Also does the olive oil go bad sitting out once the process is complete. Thank you

The main thing is that you don't want to store the garlic with the olive oil after that 48 hour mark. The infused olive oil is fine to sit out (again make sure it's been strained) if stored in a dark colored bottle away from light and heat. Use it within 2 months of making it. ☺️

The infused olive oil should last for 2+ months. If there are any signs of mold, fermentation (bubbling, cloudiness, or sliminess), foul odor, or discoloration, discard it immediately without tasting or using it.
