Not everyone can cook with alcohol. It’s frustrating that people use wine with all of these dishes

You can substitute wine for water. No one will know, per Julia child

Grocery stores usually have alcohol free cooking wines. At least where I'm from. Otherwise I'd squeeze some lemons in there for some acidity and tartness.

The way it looks very delicious!. But if you want people to follow your recipe to be able to make this dish, you have to talk slower. You are talking to fast. Someone has to play the video 10 times over just to try to understand what you're saying. Other than that everything looks good. That's just it looks good. If you understand what I'm trying to tell you slow down
