Ingredients:
12 prawns, about 1 pound (12隻大蝦, 一磅左右)
¼ tsp table salt (1/4 茶匙細鹽)
1/8 tsp white pepper (1/8茶匙白胡椒粉)
1 tsp cooking wine (1茶匙料酒)
4 Tbsp oil, divided (4湯匙菜油, 分批使用)
1 head of garlic (一頭大蒜)
2 scallions (兩支青蔥)
1 Tbsp oyster sauce (1湯匙鮮味蠔油)
½ tsp sugar (1/2 茶匙砂糖)
1 bundle of clear noodles (一捲綠豆粉條)
Instructions:
First, soak the noodles in hot water for 20 minutes.
Next, use a pair of scissors to remove the shrimp’s spear, the eyes, then reach in the head, pull out its stomach and discard. Remove the legs and the swimmerets. Insert a toothpick between the second and third section of the tail to pull out the gut. Split the shrimp in half, leave the tail attached.
Season the shrimps with salt, white pepper, and dash of cooking wine.
Place the soaked noodles on a plate, make a well in the center. Then arrange the shrimps on top of the noodles, belly side facing up. Fan out the tails for a better presentation.
Finely mince the garlic, and the scallions.
Heat two tablespoon vegetable oil, and add only half of the minced garlic to fry and brown, this step will give the dish a boost in flavor and fragrance. Add the white part of the scallions to rest of the garlic.
Then pour the fried garlic and the hot oil over. Add sugar, oyster sauce, stir and mix well. Divide the sauce evenly over the shrimps.
Steam the shrimps when the water boils and start your timer for 5 minutes. Remove the dish from heat. Top the shrimps with the green part of the scallions.
Heat 2 tablespoon vegetable oil until almost smoking, then pour the hot oil over the shrimps.
Serve immediately.
