I will admit I’m a big fan. I like that she tries new things and if things aren’t 100% perfect that’s okay. (The bagels went into the garbage or the chicken that was extra crispy or the cornbread that broke). The important thing is they were all made with love and the taste.

I used to do the ice cube thing when baking bread. You want steam for the first five minutes to allow the crust to remain soft so that the yeast pushes the dough up higher. However I found out that some ovens, including mine, have glass at the bottom that you don’t notice and I was told by a repairman not to do it as I might crack the glass. Now I put another pan (ie broiler pan) on the rack under my bread and put the ice cubes or cold water in it This creates the steam which makes for a much better loaf. You can also just use a spray bottle of cold water directly on your loaf. Don’t spray or put ice on your stone. It will crack. Trust me. Been there. Done that. 😊

That is so true what you say about sometimes you do this and not question. Sometimes I find a recipe that says "no kneeding needed" and then gets perfect bread. Them4 my mother would make dough, rest it overnight under a blanketlike wrap, kneed it, then bake it. Don't understand.
