this is awesome ...so many youtubes show it done differently. I tried it and I sucked at it.. but it was a tiny lemon. I will learn it this way.. Fantastic.. I cant wait to work as a bartender. thank you for this.

You are correct, you want to have as little pith as possible or else it will make all it touches bitter. Just be careful when you use the spoon between the pith and the peel, you will get a little of the white but with practice it won't be enough to negatively affect the cocktail. There are many ways to make twists. I usually save the lemons for juicing afterward, especially if you are going to use fresh lemon juice. Another way, which I think is classier and sexier is to use a paring knife and cut 50 cent coin sized pieces of lemon peel which if done correctly will have less pith and are easier to flame if needed. you will also preserve the lemon in it entirety if the juice is not needed until later

There's another way using the spoon. Try to fit the spoon in the middle of the pith, not where it meets the meat of the lemon. That way there's is no squirting and the twists are dry. You can also use this method with an ice pick which is much easier and faster.

Speaking from 25 years bartender/restaurant industry, (not being impolite, just teaching) that's all wrong! Using a spoon is like using a sledgehammer to drive a nail. Use a thermometer probe or other thin metal object, stick it into the skin as he's doing and follow around, turn lemon and do the other side, you won't squeeze out a single drop of lemon juice or leave lemon flesh on the skin..store in plastic container with a piece of a paper towel and your twists can last 2 weeks! You will also have a whole, unbroken lemon to use for ice tea etc

Nice Alternative method of making Lemon Twists; easy to press the actual lemon in a Citrus Press (there are many great hand held ones, so the lemon is not wasted.

you actually don't need the spoon the peel should pull away so you can roll it up as it peels back..looks like your twists have wet fruit on them..

This is a pretty unique way of doing this, so props to you for that. That said, I don't like it at all. Firstly, you've left all the pith on the zest, which will make the oils more bitter tasting. Secondly, you butchered a perfectly good lemon. And third, you've added to the amount of prep work you have to do. Practice with a channel knife will let you make nice garnishes out of a lemon after you've juiced it. It's quicker and looks professional, much nicer than out of a plastic cup.
