Yum! That soup looks delicious. My favorite is potato/ kale/ sausage soup like at Olive Garden. Today, using my first eggplant and half a honker 3.5 lb zuchinni, I'm making roasted ratatouille 😋 with veggies and herbs from my garden. My next eggplant will be made into eggplant caponata... so delicious 😋! Oh, the smell of fresh thyme... just cut some for my ratatouille.

I don’t understand why cooking shows don’t do well on gardening channels. Why do we spend so much money, time and energy in those gardens if we’re not going to eat what they produce?! I know people aren’t eating everything raw! IMO, you did a good job condensing this down to the pertinent info. Maybe other YTers don’t edit their cooking videos down to the important elements; maybe they don’t know how to edit. Who wants to watch ten minutes of dicing potatoes or onions, right?! Hi Gary, one of my favorite soups! I made mine when I harvested my leeks back in the spring. I froze the soup without potatoes, mine weren't ready to harvest yet..so when I'm ready for soup I can thaw the concentrate simmer my diced spuds put the ingredients for a loaf of bread in the bread machine, and that'll be dinner. Yes I add garlic to my soup and bread..such an easy dinner to make! Tastes wonderful too. God bless.
