Luffy didn't notice Flampe's needle. He just passed out. Also, the reason Katakuri isn't a Logia is that you can hurt him without Haki. He's only dodging because he's using his observation Haki to dodge, evade. But yeah, this episode and Katakuri fight is general is easily one of the best fights in anime. And Katakuri's a G. Whan an amazing character! BTW. Snakeman is all about speed, just like Tankman was all about defense, when he used it against Cracker.

Dude that Supreme King Haki clash is like one of the coolest moments in this show I swear. Also I know you guys are ahead, but to answer; snakeman is not necessarily stronger than base gear 4. It's just faster and less predictable, so it counters people like Katakuri who have strong Colour of Observation Haki.

I think snakeman was used now simply because the form may need a higher level of observation to use. It's attacks are way faster than 2nd gear and the fact that the attacks bounce around the way they do, Luffy may just not have been able to control it as well in the past. Also Katakuri isn't a logia by definition but in power he is. Logias are specifically natural elements, though I think it was stated somewhere that Katakuri's high observation essentially makes it a logia.

I think Because Snakeman sacrifices defense too much he couldn't go all out with it. Now that he could doge future attacks with observation, it is more reliable. But imagine him using Snake Man against doffy. That gut heel attack would have messed him up.

Katakuri was stronger than normal luffy, but geat 4 has more power. The problem is that Bounce man is too slow, and Snake man fast but not enough until he figured out the advanced observation. So the reason for the bird this with Kong Organ is just because of the name, which in Japanese apparently means murder of crows or the name sounds like the Japanese translation for "murder of crows" so it is kinda weird. But considering all of G4 moves are based on animals it also does make sense.

The move Organ Gun is based off of a type of cannon called an organ gun. It gets it's name for the instrument because it looks similar. Just look up an organ gun/ cannon and you'll see. Most of Luffy's attacks are based off of a type of gun. Gatling, Pistol, Rifle, Bazooka are all types of firearms or artillery

41:34 - I can't say this is the reason people say that the Kong Organ Gun took inspirations from birds, but after hearing you voice your annoyance I did some research and this is what said research led me to. 1. If you don't already know this, the names of attacks and techniques in manga are different than they are in the anime about 90% of the time. Some examples of this are the Shadow Clone Jutsu from Naruto, which is called the Doppelganger Technique in the manga and the Solar Flare from Dragon Ball, which is called the Fist of the Sun in the manga. In the manga, the Gum Gum Kong Organ Gun is called the Rubber Rubber Monkey King Murder of Crows Cannon (If you don't know, a flock of crows is called a murder). Murder of Crows was translated into Organ, leading me to believe that in some parts of the world, a murder of crows is called an organ. This would make sense seeing as all of Luffy's other Gear Fourth attack names share an animal inspiration (Rhino Schneider, Leo Bazooka, etc.) 2. It could double as it being a play on a murder of crows and the attack itself actually looking like an organ. This wouldn't be the first time Oda has done plays on words like this. An example of him doing multi-plays on words is the bull from Dressrosa, Ucy. Ucy was derived from Luffy's fake name, Lucy, as well as a play on the Japanese word Ushi, which means cow or bull. As some other people in the comments have pointed out as well, an Organ Gun is an actual weapon. I will say again, this is what a few minutes of research has told me, so I could be wrong and those people could just be ignorant people. I'm just saying that the people saying the attack is named after a flock of birds might not be all that far from the mark.

I'll take the challenge. Luffy commonly names his moves after animals after the time skip, birds too; Hawk rife/ Gatling, Red Hawk. I can't find anything about that being a term for a group of birds, but it could be in a different language for all we know, Oda is from a different country. I get what you're saying about organ pipes kind of looking like his fists, but they don't move like his arms do, go look at any pipe organ being played, and you'll see that the pipes are completely stationary. That move seems much more reminiscent of a murder of crows attacking you, because they are covered in armament haki and coming one after another fairly quickly. He's literally never once named one of his moves after a musical instrument...

The thing with Katakuri devil fruit Oda forgot logia where only elements by his own rules mochi didn't count. He even said logia one chapter then changed it to special paramecia to describe the fruit. So how I see it only reason Katakuri mochi body works like logia his observation haki so awesome. Can make his body mochi to dodge all attacks aimed at him. Anyone else has that fruit without super observation haki get shot by bullets before making themselves mochi.

That's not confirmed or even implied in the series. Oda originally meant him to be logia. The "special-paramecia" is just an excuse to let Katakuri have logia abilities despite not being a natural element. We only see him evade consciously because everyone is a haki user. EVERY logia would have to evade consciously.
