I have the All Powers 200 watt panel and I love it. It works great and charges my Bluetti quickly. I've never tried their power station but it looks like it might make a great second option

I’m concerned about the covers on the sides. They look like they could break/ snap off easily. And, how about the rubber covers on the front. The rubber covers on my all power fridge are breaking off. I really like my all power 20 quart fridge for short trips and my dual fridge freezer that’s around 35 quart for longer trips. I had no idea they had power station. Please let me know what you think about the covers on side and rubber on front.

Covers can potentially break if you leave them open. But they really aren't essential. I was thinking of removing them so ports are easier to get to. Haha. Rubber seems like good quick.

Can you run it down to zero and charge with panels?

I don't see why not. But it probably won't fully charge in just 1 day.
