I admire you in taking the time to restore a rusty knife...(don't know if it is worth it, because most of the name brand Japanese knife would have brand name on the knife blade). I made a bushcraft knife out of my lawnmower blade that has seen the end of its life three years ago. Due to it is a soft steel, I had to go thru the hardening/tempering process to get the proper hardness. It was an experimental, trial run, and did not expect anything good out of this, just for fun and learn something out of it. The end result is a working bushcraft knife, which I got great satisfaction out of the whole process. Good job...

Beautiful work. The knife.is a classic deba, heavy, thick spined cutting knife designed to handle cutting thick fish bones. As somebody mentioned it is probably not an expensive knife to start with, since most expensive Japanese forged blades have embossed characters on the blade identifying the maker. The restored uniform mirror finish hints that the knife is made of cheaper stainless rather than tempered high carbon found in expensive knives. Classic Japanese knives, like swords, do not have the handles epoxied on. The handles are designed so be removed for cleaning or maintenance, and are held on by friction. The modern Japanese knives are riveted or molded on, like western knives. In Japan, replacement handles are readily available. This knife had a single right-handed bevel like a Samurai sword. The "left" side of the blade is straight and has no bevel. Sharpening this side of the blade is simply making sure that side is flat. Sashimi knives typically are single beveled since a right hand slice of the fish if done with a double beveled knife will result in the cut curving to the right following the bevel, very uncool in making a straight slice.
