Medium rare mallard finger steaks!! I didn’t find Sandhill Crane quite as good as ribeye haha, but some of the best bird I’ve ever had. On the other hand crane bone broth is just as good as any beef broth!

⁠@@BetterdayswestI ate my crane as steak and steak tacos, only had one tag so didn’t get to do much experimenting. I found the flavor strong but still delicious. I bet if I had breaded some it would have been better than the mallard. It’s also possible our Greater Sandhills who seem to always be on pasture eating bugs and grass, have a stronger flavor than the Lessers out there in the grain fields.

We filmed from Oct 2023 to Feb 2024 and we are just now distributing the content. It’s hard for a two man team to travel, film, edit with full time jobs and do quick turnaround edits at this level. So we did all the filming first. And now Chiam is editing so that we launch each episode every two weeks with podcasts in between. Not being a Karen at all! Totally reasonable question!
