Great stuff. You say , @ 1:40, you give the "difficult" stakeholder what they need and eventually they will become an ally. That is the thing; some times, may be most of the time, you cannot give them what they want. He is asking for a feature that is out of the the scope of the current project. How can you deal with him then?

I said I give them the information they need, this doesn't mean I give them the features they are asking for. This can take many forms. It could be making them feel heard or understood, creating a user story to be prioritized later, suggesting a work around, documenting their space in such a way they know I fully understand their problem and am equipped to solve it for them when the opportunity is there, it can be making them understand from their own perspective why it can't/won't be prioritized... Which is essentially the job of a BA.

I thought scope creep is prevalent in an Agile Dev environment as a client/product owner is able to put their input more frequently?

Scope creep is adding items that were not in the agreed scope or "plan". In agile the scope is defined at a user story level (what is in scope of this user story) and at a sprint level (what is in scope for this sprint based on the teams velocity & POs prioritization). This means planning is happening over and over again... Every sprint. So it isn't scope creep to add a user story to the backlog then prioritized for the next sprint. That's just the normal planning cycle.

Definitely Not. My course is to help new BAs understand the role and the value it brings. Intended to help transition into the role (resume and interview prep) and help those thrust into the role be successful quickly. IIBA Certification requires a much more detailed and comprehensive look at the specifics of the BABOK, which my course is not.
