Looks so delicious. Here in Egypt we usually fill red, green, yellow bell pepper and also eggplant with a mixture of rice, tomatoes, parsley and dill.. served with Molokya and meat. Have also seen your rice pudding, it's amazing.

Dimitra I just made Gemista for the first time and it turned out sooo so good!! Thank you for a great recipe! I substituted ground beef for vegetarian mincemeat and it turned out delicious. I love the Greek islands and miss all the yummy food now that we haven’t been able to travel for a while 😊

@@DimitrasDishes It's a great goal for 9 months from now......it's perfect timing actually. The magic is to stay at least a month, not get there then turn around and come home (as you well know) We go to Rome first, for a week, then fly to southern Italy to Brindisi.....take the ferry boat at midnight (sleep for the 6 hours) at 6am we arrive in Corfu, Greece, stay for 2 weeks....travel and eat our way around the islands......then fly to Athens.....after a month, fly Athens to Detroit, MI. It's an unbelievable trip. Family in Rome, Corfu and Athens. See you there in 9 months, Dimetra. Your timing couldn't be more perfect ♡

Pouring sauce over the veggies is definitely a great idea to make them soft. I have followed other recipes of stuffed peppers that is baked in the oven without any sauce and the peppers remain crunchy. Dimitra, you should audition for a TV show, seriously ☺️☺️

"Add ground beef" so sparking off a new Greek civil war. Just joking but meat vs no meat 'gemista' is a great way to get Greeks on social media to start arguing. personally, I prefer without as the meat can be used in so many other dishes and stuffed veggies are great on their own

I think both are just as tasty. It depends if you want to serve this dish as a side dish to a meat entry dish, or as a main dish. I'm going for the main dish appeal so I am going to make it with meat so it is more filling. Serve it with some honey roasted carrots and more potatoes and feta cheese, and more rice? Its sooooo good 👍 😊

Love your channel! Question for you. In your original video, you add 2 cups of water to the 1 cup of rice. In this new video, you SAY that you add ONE cup of water to the one cup of rice. However, the written recipe in both videos say 2 cups of water. Please clarify.

Why not put the eggplant pulp alongside the potatoes when roasting. Isn't 1 1/2 hrs in the oven an extremely long time especially since the filling has already been partially cooked?

This is one dish I make often, but the lazy way. I just add everything raw, stuff the vegetables, cook at low setting for about to an hour, and skip the sauce.

Did I catch a piece of parchment under the foil? I cook all my food in the oven like that. I dont know ANYONE else who does that. I know some Chefs do it when cooking highly acidic foods.

Wow! Thank you for the tip of the parchment paper. I have an issue of the foil touching the food and rusting or dissolving on the food. I LOVE that idea of protecting the food with parchment paper under the foiL

i think the issue is that it cant be stuffed , its the wrong shape and size , you could certainly add some whole to the roasting pan though but may need to add them later

Potatoes don't get cooked and also the vegetables because of the tomatoes and it takes 3 to 4 hours yet the vegetables are raw not cooked
