i have used the same method for scones for years. what i found is that as much as i liked making scones i would sometimes put it off or change plans because grating frozen butter annoyed me. so that i can more quickly make a batch, i grate from-the-fridge sticks of butter, usually four. i freeze each grated stick individually so that the process comes together faster when the family gets a craving for scones.

I don't know how you could improve on the original because they were fantastic, but these are making my stomach growl! I grated the butter just like you showed with your original scones, it's genius!💖☘☘☘

Really no need to grate butter! By rubbing in the butter/spead the taste is mixed throughout the dough.

Besides my family, scones are what I miss the most about Northern Ireland! I have tried several recipes and they have never lived up to the true “Irish” scone taste. This recipe most certainly did! Thank you!! As well, your direction and tip were dead on. I’m an instant fan and have now subscribed to your channel. I look forward to binge watching your vlogs. Haha

I don't have a grater, but I used my food processor to pulse the butter and flour. It turned out perfect!

I also use my food processor, as I've never liked rubbing butter into flour. In addition, if am making plain scones I add most of the liquid and carefully pulse until the dough just comes together. The whole process is so fast I usually end making two or three batches. So lots of light and fluffy scones for freezing! Yum-yum!!

Okay I have a ques. Is it sconn or scown? I grew up saying scown but as an adult people have told me I was saying it wrong all those time and corrected me with sconn. I googled few years back and seemed like at the time, everyone and their mother, on the net, came with pretty much the same consensus, should be pronounced as sconn. And here my beloved master baker Gemma is saying it the way I said it as a kid. So, which is the correct pronunciation?

Hi Gemma, my husband and I have never eaten scones, so we thought we'd give it a try with scones I bought at the supermarket. Well, lets just say we were not enthusiastic about them. So I tried your recipe and wow they are delicious! My husband came home from work as I took the scones out of the oven, so he could dig in immediately! He loved them and said that it adding nything to it like jam or butter was necessary: they were fluffy (not too fluffy), sweet but not too sweet and the toplayer was crunchy because of the milk/egg trick you showed us! Thank you very much, Gemma. I am on to more bigger and bolder baking!

Hi, Gemma. I absolutely love scones with my earl grey tea. Will try that trick of freezing the cut out scones. How long do you think they’ll keep in the freezer?

What an interesting scone recipe.... A tip I know with making scones. Do not twist the cutter as you cut the scones. Just press in and out. For some reason scones rise more doing this and are even fluffier as you are not working the dough more.

I love savory cheese scones (but I usually omit the mustard most recipes suggest) especially if they have extra cheese sprinkled on top before baking.

Hello Gemma! I enjoyed watching you preparing these delicious- looking- Scones - They look yummy! You are a professional baker- and so, I am just wondering ....... you are wearing a ring while preparing this dough - Your hands ought to be free of jewellery ! Why? When washing your hands, soap residue can stick to the ring! Also, your long hair ought to be tied.. lest a hair could easily fall in your dough! You have very long hair! ❤ Every cook ought to wear a net or a hat! In Hotels and fine restaurants Chefs always wear a Chef's Hat! Just my observation!

Found out I’m Irish on both sides and now I know why St. Patrick’s Day has always meant a lot to me. I’ll be celebrating this year by attending a local Parade and making Corned Beef and Cabbage (as I do every year) and now these Scones. Absolutely perfect! Happy St. Patrick’s Day 💚! Why don't you just do flour and baking powder. Traditional is made with traditional ingredients. and in the time you spent explaining the self raising flour you could have given the proportions. I see people doing that I just turn off the video

I'm trying this recipe tomorrow afternoon so they re ready for St Patrick🍀 I've lived in Ireland for three months a few years ago and my host mum made them once but I didn't like them very much so i'm very curious to see if I like you're better! Always amazing recipes Gemma!

They look lovely. I prefer currants to raisins but would I need to soak them first before adding to flour? They seem a bit drier than raisins.

I prefer currants in my scones, and yes, I steep them in hot water and drain them well before using. So good!

I love making scones I usually make mine with cranberries, orange zest and ginger , strawberries, blackberries or raspberries. Your right on with the frozen butter for pastry and baking some goodies.

Would this still work the same if you dobuble the recipe? Or is it better to do smaller batches? I'm doing a production of Titanic the musical and want to make them for the cast to celebrate our Irish characters! :)

Hi Gemma, what cream do you recommend to compliment the scones. Clotted cream or Creme Fraîche? Not really understand the difference in taste between the two creams. Thanks

I baked these and they were perfect!! I recommend baking for at least 20 minutes for a pretty golden color.

Omg!! I just had to comment when you used your fingers... Like I do that too when I'm glazing my pies and things.. Mostly bcuz I don't own a brush.. Anyway I believe everything is better using fingers...😊😌😍💯💐👌❤️Be blessed

Doesn't the self rising flour already have baking powder in it? Why do u add more?

The baking powder adds more leavening, but do not worry as this works well with the self-rising flour

Ah Gemma you used a knife on a fresh scone, thats a sin. Always break the scone open with your hands when its fresh out of the oven. 😁

I’m a little lost here... on the recipe it says 4 cups and 2/3. --> or 680 grams. But 4 cups is 1kilogram so Im confused about witch one is correct :$ a little help here! I’m already doing it but I don’t know if taking off some flour or not 🙈

Recipes do vary. Scones are quite forgiving, go for a slightly sticky dough. Modern Europeans are confused by cups! And a few Americans don't seem to have scales!

Hi Celeste. I use the American standard for measurement in baking. 1 cup would be equivalent to 142g for AP flour.

Please try soaking your raisins/sultanas etc in hot tea. It stops them burning or drying out.

Hi Gemma, I tried making them and they turned out absolutely perfect! Hv tried many scones recipes in the past and they always turned out rock hard or failed to rise for some reason. Your irish scone recipe is a keeper. Thank you for sharing it.
