This is the best chocolate chip recipe that I've ever tried. I've made it 5 times! However the last 3 times I've made it, I used 2 cups of brown sugar and 1/4 cup of white sugar. I love the taste of them with more brown sugar and less white.

I just tried it and it was excellent! Followed exactly what Gemma did!! But I did it by hand so I microwaved my butter till it became soft and then added the sugar! I almost cried because every time I baked cookies it always comes out hard but THIS recipe was a gem!! Thank you Gemma!!! 💖 thanks for helping us through these simple steps!

These came out great. Incredibly tasty and chewy. Better than buying any cookie at a store. I thought I had under-cooked them because they were so soft out of the oven, but they firmed up soon enough.

By far the BEST cookies I've ever eaten in my LIFE. The only thing I noticed was that if you roll them into balls and compact the dough, your cookies will come out thick. If you want them thinner use an icecream scoop like Gemma did so it's not dense and there is more air incorporated into it.

Yeah I made that mistake. I made 18 of them using a spoon , then another six with ice cream scoop and squashed them a bit. Much better result. (I have to also admit that I used my late mother's stash of turbinado and my molasses mix for my brown sugar cuz that's all I had. While it tastes great, it is way too coarse. I need to get more regular organic sugar for that purpose). The rest of my dough is now in the freezer squashed.

Well mine came out really thick too even if I used an ice-cream scoop, measured and weight everything. Not sure if it needs baking powder at all. A bit disappointed. I’ll try a different recipe.

I tried this recipe and baked half the batter after 4 hors in the fridge, and then baked some the next morning...I absolutely LOVE this cookie recipe!!!!!! LOVE the flavour, I mean, olive oil - who knew??? It's so yummy, tha k you SO much for sharing!!

Wow I tried this recipe right now and it's so delicious! Definitely recommend chilling the dough overnight. I actually left a portion of the dough in the fridge for tomorrow to see if the flavor is better. You did it again gemma! Never fail to impress

i laughed when you said that is not a typo because in your blog i asked about your donuts if they really called for one tablespoon of vanilla extract and thankfully you responded and said yes. i am not a experienced baker but ive always seen others call for small amounts of extract. I had already made the donut batter and when i tried them, indeed they would have been so much tastier with that one tablespoon of vanilla extract. I hope to give these a try and someday the donut recipe again with one tablespoon of vanilla. Thank you!

Just finished baking these. Made the mixture yesterday late afternoon. Left overnight. Couldn't wait for them to cool down. Ate one, they are truely, best tasting yummies. I absolutely love this recipe. I love the fact I can leave in the fridge for up to 6 days. Loving this recipe.

Not sure how your cookies went but hope this is of help : 1. Flours don't absorb liquid equally. Use up to 3/4 in one go and adjust it accordingly to reach the same consistency with mine. 2.DO NOT over mix. Make sure all ingredients are at room temperature. Mix until ingredients just combine. Over mixing will separate fat from butter or oil causing the cookie spread out during baking. 3. Chill your dough enhances flavors and stabilizes dough to prevent cookies from spreading out. 4.Pre heat your oven, the moment you put your cookies in , they start to rise. Imagine melting chocolate on stove top on low heat, you wouldn't want the low heat to cause your cool cookie dough to melt slowly. HOW TO GET CRACKLY TOP FOR COOKIES 1. From moisture difference: Besides brown sugar which creates the caramel aroma, mixing in some white sugar which has less moisture to get caramelized faster will give you the crackly top. 2. From EGG whites: After adding in eggs before adding in cocoa powder, whisk all ingredients together until light in color. This process will add loads of air into the batter to create a crispy MERINGUE like layer to form the shiny and crackly top. If you substitute eggs, you may lack this feature. 3. From temperature change: Banging the pan over the counter when they just come out of the oven warm. This will quickly let some hot air out of the top to help with a crackly skin. Hope you get on well with this recipe!

I am a big fan of baking with olive oil (those more to the fruity side rather than peppery/spicy side) and usually use a mix of fats, but citrus, nutty and honey/cinnamon cakes fully deserve 100% olive oil!

I’ve tried the recipe 2 to 3 times now. The taste was absolutely amazing. 😍😍😍 However, mine didn’t turn out to flatten as much as yours and were a bit more on the fluffier side What could’ve been the reason for this?

Thanks for trying it out, Ahsan! 1. your dough might have been on the dry side. Flour in different places behaves in different ways, depending on how, where, when and the type of wheat grain being milled. They absorb liquid differently. You may need more for yours to get the same consistency with mine, 2. You might have over handled the dough which strengthened the gluten to prevent them from spreading . Make sure all ingredients are at room temperature and mix until just combined. 3. Or if your oven runs higher than mine, your chocolate got burnt too fast and the outside of your cookies hardened too fast so they could not spread as expected. I DO recommend chilling your cookie dough in the fridge or freezer. However, baking from frozen will affect the texture. Let frozen cookie dough sit at room temperature for 10-15 minutes while preheating the oven then bake them until the edges are set and the cookie is beginning to turn darker or golden brown throughout, but still doughie and a bit pale in the middle. They will set more while cooling down. Hope this helps!

I made these, following your recipe exactly. My dough was not as runny as yours was, but I still put it in the fridge for 4 hours. After baking for 12 mins at 375, they did turn out crispy on the outside, but somewhat cakey on the inside, not chewy as I was hoping. Maybe I will cut down on the baking time to see if this helps. Thanks for a wonderful recipe.

Hi Kristi. Your may have needed more time to bake. Ovens don't always function or perform the same way. Hence, some recipes may need more baking time.

You can do that. You can use any kind of olive oil and it will still come out grand. But you can also lessen the amount a bit, if you do not want a strong flavor.

Hi, thanks so much for another recipe for Chocolate Chip Cookies looks delicacy. I'm going to make tomorrow and it seems to me there's a problem with the brown sugar weight. You indicate in the recipe 1.5 cups of brown sugar 255 g and half a cup of white sugar 115 g. I would love your opinion. Thanks again Yael

Hi. The mass (amount of matter in an object) for ingredients can vary even if they have the same volume (how much space an object occupies). A cup of white sugar would be equivalent to 8 oz/ 225 g, while a cup of brown sugar would be 6oz / 170g.

The level of sweetness would be subjective, and largely a matter of preference. You can use milk chocolate and keep the sugar as it is, or reduce it by no more than a quarter of the amount in the recipe. Hope this helps.

Hi Gemma! I had a question. Instead of using regular butter, can you brown the butter to make the cookies even better? I know you cant cream melted butter with sugar, but after you brown the butter, can you just mix it with the brown sugar and white sugar and then follow the rest of the steps? Or is this not possible? Thanks, Pranavi

Browned butter will add nice flavors to the cookies. But softened butter can whip up better and cream with sugar to hold more air in the cookie dough to yield a fluffier texture than browned butter. So it's a matter of your choice to decide to go with which one. Hope you get on well and enjoy!

I made whole wheat chocolate chip cookies last week, they were really good. I want to try this recipe with the whole wheat flour, might have to be modified a little for the difference in flour.

Go for it! But you may need to adjust the amount of liquids that go into it as flours do not absorb liquids the same way. Some may need more, others less than what the recipe requires. Add the amount needed to reach the same consistency as mine in the video. I hope this helps.

THANK YOU!! I have also been on the hunt for a CHEWY chocolate chip cookie - everyone out there says chewy but all they mean is soft in the middle(not chewy in the middle). So I really hope these are actually chewy and will be trying them this weekend!!!!! I made your raisin oatmeal cookies a couple of days ago and really loved them :)

@@samcyam they were just soft in the middle😟 Also I think the medium flavoured olive oil made the flavour weird. I think you gotta use the strong/virgin stuff to be pronounced or else flavourless, not inbetween. I've tried 5 diff recipes so far, closest texture to what I want is the tollhouse one. Just need to add more depth of flavour like extra salt and brown butter too.

@@SarahTrivedi Thanks for replying. I appreciate the video, but the search continues for me. I just finished a batch and found the center just soft, not chewy and the flavour of olive oil is a little off-putting. It wasn't mentioned in video, but to create that chocolate pooling on top, extra chunks of chocolate would need to be added on top before going into the oven. I will try the Tollhouse recipe. Thanks so much.

You should use good quality chocolate like Lindt do half dark and half milk chocolate

Candy Girl is correct. Use a good quality chocolate. Lindt or Ghirardelli are good choices. You can use any chocolate, baking or regular dark chocolate. I hope this helps.

I recently bought an air fryer and I was thinking of baking cookie in it. Air fryers normally tend to bake/ cook things faster as compared to an oven. In your opinion at what temperature and for how long should I bake these cookies in the air fryer 😅😬 I'm using 'cosori premium' air fryer

I just finished a test bake of this recipe and they are yummmmmmy! They're like the gourmet cookie dough you get from school fundraisers and bake yourself. I'm going to let the remaining cookie dough sit overnight and finish baking them all tomorrow.

Not really. It makes the cookie more flavorful, enhancing the flavor of the rest of the ingredients.

I don’t recommend it. Spreadable butter will not give you as good a result as one made with real butter. If it’s not the spreadable kind of margarine, you can use it to sub the butter here, but trust me on this, the flavor will not be as good.
