I had gotten into the habit of creating an entire scale and then taking things away until it sounded good to me. The concept of starting simply and gradually building makes much more sense // seems faster.

Yeah, this method is useful if you like the transpositions. It's more of a modular approach to melody. If you want a strict scale (depending on the scale of course) just using one stepper can be the way to go. What I like about using two steppers non-randomly is that you get pitches right next to each other (stepwise motion) like a traditional melody, whereas using one stepper with a scale, you get a lot of big jumps
