Loved it, Sven! I'll get my beef from the Amish that live close to me. The quality is fantastic and you can taste the difference. Plus, the prices are fantastic. I love tenderloin but a good alternative that's cheaper is flat iron, which I use a lot. I can't wait for the rest!

I just discovered a Halal butcher-shop around my area, and I’ve started to purchase my meat there. Halal meat come from cows that are raised with better and safer living standards than the typical cows. It’s based on religious traditions, which is why I know they’re trustworthy since people usually do respect their religious traditions. Thank you for this informational video! 😊👌🏼

Curious if you have tried your hand at flame grilling churrasco steak yourself? Getting a well marbled skirt steak to flame grill makes for a flavorful and very affordable steak dinner! I make Spanish rice with some fried plantains and peas in it also! When my wife and I visited Puerto Rico it was my goal to try churrasco at each new restaurant and the best was a local roadside restaurant and out shown a high end version that cost quadruple the price!

I don't know if you covered it in a previous video, but in the US(I don't know about other countries), many grocery stores and some chain restaurants "glue" steak cuts. This is a process of taking similar cuts of beef and using an edible glue substance called Transglutaminase to create what looks like a cut that came from a single section of an animal when it is often multiple animals and cross grades. It takes a bit of a practiced eye, but you can tell if a cut has been glued by the fusion points of the meat.

Meat glue (which is a just a protein enzyme ) is widely used around the world. To get the most of of a cut or cuts of meat. All, that said.. this is why you buy meat from a butcher, or as local as possible.

Alcohol with steak depends from person to person. As a server in a high end restaurant in NYC i can tell you any beverage is upto the person. There is no right or wrong. Anyone who tells you, white wine with red meat is a no, dont listen to him/her. There are so many factors to consider. If I like Sancere, who are you to tell me that Sauvignon Blanc does not go with spicy lamb. If you are used to drinking big Cabernet, you might not like light Burgundies with Grilled Salmon. Alcohol is all about preferences and perception. Majority of the guidelines are good marketing. On a side note, Champagne as an aperitif is great. To be on a safe sude, lighter flavors go with light wines ( white like Riesling, Gruner, even Pinot Noir) and big flavors go big wines (Amarone, Cabernet, Malbec...) I dont know if i helped you or confused you lol. 😬😬

I personally prefer lean meat. I personally prefer grass fed. I personally prefer black Angus beef. The porterhouse is my favorite cut. I prefer to grill my thick steaks on a cast iron grill pan with unsalted butter. I prefer to eat my steaks with a fresh salad and a glass of red wine.

I do know there is some fallout from the antibiotics and chemicals they inject into grain fed cows and their feed, but I would think grazing grass fed cows are treated more humanely and have less chemicals in them.

Kobe beef must be from the prefecture (around Kobe), all the rest is named after the prefecture where it is coming from, in Japan I could buy Japan beef but Kobe they not really have in the shop, that 4000 cows go to known restaurants, that is in the shops is from a different prefecture but in the same quality. It is quit easy to see if it is Japan beef or not, the Japan beef is not just extrem marbled, the color is bright as veal, US, Canadian or Austrilian is dark red and not near as faty. Japan beef should be cooked in Janpan style, they not know the big steaks, since they eat with sticks they cut all in smale pieces. Such a mouth size piece is then grilled from all sides. It becomes quit difficult to grill a large steak. It does not really dry out while grilled, but it must be cooked well done, otherwise the fat has not been resolved inside and the full flavor does not get out, it can be quit gummy when not cooked enouth and until a big steak is ok the outside gets quit dry. To grill big steaks the US is the best to use, Japanees beef should be cooked Japan style. Yes a tenderloin you can use and make a Rosini that works because in the pan you can reduce heat and let it cook 15min on low flame in the sauce.
