roots grow into the medium, so if you were to have a large soft drink plastic bottle, cut the bottom, place it upside down(cap side down, with the cut side up) and plant a seed/plant at the cap end the roots will grow up into the medium filled upside down plastic bottle, while the plant will turn and grow upwards searching for light.

I mean, kind of? Roots will always prefer to grow downwards, but feeder roots can't grow if there isn't any water present. So you'll end up with roots growing sideways, before growing upwards out of necessity. Your plant will always be a little leggy, and probably won't grow or produce fruits as well as an upright plant will, but you can if you can do this if you're running out of space- Though, it'd probably be better if you just turn the bottle upright and plant normally like you would in a hanging basket.
