Could you say to your boss: Wie gehen es Sie?

No ❌'Wie gehen es Sie?' is not correct. The right way to say this is ✅ 'Wie geht es Ihnen?' The reason is that gehen in this case requires Dativ, and 'you' in Dativ form is 'Ihnen'. If you didn't learn the cases (Dativ etc.) yet, just remember it as a fixed expression for now 😄
