In the manual R1 is the switch (or relay) contact. In the video the analog meter is attached to pin 4 to show switch closure at the appropriate pressure. The interesting thing about this pressure transducer is it not only outputs a voltage proportional to the pressure, but it also has a switch to indicates reaching a certain pressure as well as a visual indicator showing the pressure. Most pressure transducers only provide either a switch or an analog output.
