This is the kind of channel i've been trying to find for years. BestEverFoodReviewShow is also very informative (not to mention funny) but mostly centres around Vietnam or the culinary arts and customs from everywhere else except Thailand which is a cuisine i've been meticulously studying for a decade and keen to learn more of. Love this! amazing work guys!

Really fun to watch this one! I loved the way you described your reaction to the spicy food and your reaction to your friend having almost no reaction to the spiciness. I'm sure I would not be able to handle one bite of that hot stuff.

Just found you and OMG I’m a foodie and just spent a year in SE Asia (not my first time in Asia, about 6th) and LOVE eating and learning WHY cultures eat in a certain way. Food is history!!! And, I eat everything and very spicy! And yes, humans do bond via food. I feel that you can experience a culture via the food. Unfortunately, there’s not much to say about the US, except my experiences in NYC and upbringing in Cajun country Louisiana. Soooo! Yes, I travel internationally for food!!!! Thank you for this channel! Lived in France and speak French so you can imagine my palate! Lol

I had been following The Big forkers videos for some time now and which also led me here. It was enlightening for me regarding food and culture. Both of yours and Sid's journey's are interesting to hear especially moving from one career to the other. So idk if I should say inspiring but it's fascinating for now.

Thank you! Ultimately it comes down to a desire to always want to keep learning. I can't say "do what you love", because both of us went into the kitchen/restaurant business because we love food and it QUICKLY becomes work and not pleasure. But this never feels like work, because there's no monotony, it's just constant learning.

แกงป่าลุงสง่า(Gaeng Pa Lung Sa-nga) is one of the best อาหารป่า (rustic/old style/game meat restaurant) in Thailand. If you like this style of food go to Kanchanaburi and Ratchaburi, There're many good restaurant (and some legendaries level) like ลูกลุงด้อ or แกงป่าหมอชู. Beware the spicy level, it's kinda hell on earth level.

I thought pad thai was only eaten by foreigners but about six years ago I was hitchhiking through random non-touristy areas of Thailand and when we got to the town that had a cheap hotel I was going to stay in my drivers who were locals pointed out a pad Thai place and highly recommended it. After checking in I went there for dinner. They sold nothing but pad Thai and I was the only farang in sight, yet the place was popular. Even though other Thai friends have made fun of me for eating pad thai sometimes I no longer think of it as inauthentic.

what i love about jungle curry is like you will experience a rollercoaster spicy. first test will be like sudden spicy test at about 4th level then disappear after that the level of spiciness will be like 1,2,4,6,8 and when you think you are going to be alright with the spiciness and level is getting lower, after test of burn and hot from all of the spice will start kick in hotter and hotter.

Thai here, agree with you there, the taste is just... mystic, like the jungle itself for me, they got them all, sweet, sour, spicy, salty, just like tomyum, but doesn't taste like tomyum.

Interesting video. I always think of pat kaprao gai kai dao (พัดกระเพราไก่ไข่ดาว) as the iconic street food of Central Thailand.

And it's really funny that in Tokyo Japan already have Thai MOO-KA-TA restaurants now. Lol It's because there are a lot of Japanese tourists came to Thailand and tried Moo-Ka-Ta and love it.

I mean it does make sense- it’s grilled meat combined with shabu-shabu....It’s also crazy to me how much Japanese food has been absorbed into Thai cuisine the exact same way. Every street market here is at least like 20% Japanese snacks (but recreated in a thai style)

@@OTRontheroad it's probably because there are a lot of Japanese that love Thai foods and cultures and Thai really love Japanese foods and culture too my friend, that's why there are more than 100,000+ population of Japanese people already moved to live here in Thailand and that's why we have Japanese food everywhere there is even a Japan town here. For me the most funny Thai dessert here called "ToKyo" but the ToKyo people never heard of it! Lol. It's a kind of little crape with many filling inside like mince pork or mini egg or Thai custard. And the funny part was a lot of Japanese people really love it and many of them even try to make them at their home like I saw the famous Japanese KZbinr(Hiro) try to make it with their Thailand lover Community in Japan. You can find this Tokyo dessert only from street vendors. Lol

I usually don't find jungle curry to be spicy like I initially expected. It's some of the red curries I find spicy. But the spiciest thing I ever ate was a laab on the side of the highway heading north out of Bangkok years ago. It was hotter than anything I ever ate in Sichuan, Mexico, or India.

It is the talent of Thai food creators who can Tasting and carving recipes from different nationalities Because we have many ingredients for cooking. When the food from the original It will be modified by a Thai cook to change the condition of the original recipe. then developed into a new food and when presented to Thai foodies They like us to call it Thai food. The word Thai in meaning is Free and unfixed. You can eat it and you can tell it's Thai food. But you will feel that I think I've eaten somewhere before. It must have come from the food of another nation. But it has been modified by creating and adding Thai flavors: salty, spicy, sour, sweet, oily, and the aroma of herbs that drown out the smell of the meat. and still amazingly brings out the aroma and flavor of the ingredients.

Thank you, enjoyed your contents very much that I went to all in one day. This restaurant is close to my home but yet never go there, thank you so much, planning to take lots of foreign friends there. If you love jungle foods, try to go to Kanchanaburi. I had very few foods I love to eat in Bangkok. The best foods of Thailand that my family drives 200+ km to; is in Singburi, loves fish dishes catched from a local river there. The best place the local food provinces come with the package of nice looking environment that I welcomed lots of my friends are Rayong, Petchaburi and Trad.

Mikey Chen would agree with the Singapore assessment. He always goes for the cheap food! He does like the expensive foods, but the local foods always are tops! Excellent discussion re: origins of food. Peppers are a great example of this.

I think it was Khao Soi Islam....which is great. My recommendation is Khao Soi Lamduan Fahan (or some similar spelling). That's my all-time favorite. But there are like 5 ripoff places there that use that name- make sure you go to the real one, which is this one goo.gl/maps/i8c3V4UAj3kSgCV39

just wanted to say your intro was really great man; it definitely pulled me in and made me want to keep watching. The topic kind of makes me think of 'Hot Ones', where they get pretty philosophical while suffering eating spicy food lol. There can be something quite spiritual with a high from spicy food lol. Having the chapters is really helpful too, I see your point about being able to click ahead instead of clicking off to something else. Cool stuff. edit: I think there's a good balance to be had between authenticity and actually yummy food/enjoyment. It's pretty interesting to think about. I only know Korean/Japanese hotpot, but man do I love it lol. It's pretty interesting that (I think) it started in China, then became popular and moved to Japan, and then eventually moved to Korea (despite being essentially the same dish). Food migration (?) is pretty interesting indeed. that bit around 8:36 totally reminds me of Korean food. (Looks super yummy too btw)

As I said in the video- the history of food is just a way to understand the history of people. And you can go back even further if we're talking about hot pot- the legend is it actually started as a way for Mongolian soldiers under Genghis Khan to cook at camp sites using their helmets as a bowl. And from there it spread to China, then all over Asia and beyond. Fascinating stuff.
