Ingredients:
Fresh Malai (cream) collected over time
Water
Instructions:
➨Collect fresh malai (cream) from the top of boiled and cooled milk.
➨ Store the collected malai in a refrigerator.
➨Allow the collected malai to reach room temperature before starting the process.
➨In a large bowl, take the malai and start churning it. You can use a hand churner or an electric blender for this step.
➨ Add cold water while churning to separate the butter from the buttermilk. Continue churning until you see the butter forming lumps.
➨Once the butter separates, collect it in a separate bowl.
➨Transfer the butter to a heavy-bottomed pan.
➨Heat the pan on a medium flame, and allow the butter to melt completely.
➨Continue to cook the melted butter on low heat. It will start bubbling and spluttering as the water evaporates.
➨After a while, the bubbling will reduce, and you will see the ghee starting to separate from the milk solids.
➨Once the ghee turns golden and the milk solids at the bottom turn brown, turn off the heat.
➨Allow the ghee to cool slightly, then strain it through a fine mesh strainer or a muslin cloth into a clean, dry container.
➨Store the desi ghee in an airtight container at room temperature or in the refrigerator. It has a long shelf life and can be used for various culinary purposes.
