I'm in Scotland 🏴󠁧󠁢󠁳󠁣󠁴󠁿 Of course we're known for shortbread which is just buttery, sugary perfection! Our other biscuit is the 'empire biscuit' (the name is not ideal - there have been discussions over the years about what we could call it instead!). It's 2 biscuits with jam in the middle, icing on top, and a jelly sweet in the middle on top or a glacé cherry. They're the best!
