Great series yinz did ! About the cheese on fish....I've never heard of putting cheese on fish till 3 yrs ago, and I'm 56. I live in pgh, PA, not some small town, we're pretty diverse...when growing up we only put cheese on hamburgers, meetball subs and pasta....cheese on a hot dog was a special occasion.....actually, we used velveta cheese for trout bait.....that was way before powerbait came around.. I've tried grated parm on fish, it's kinda ok... I bet your mom and dad didn't grow up putting cheese on fish...not trying to start an argument, just explaining my perpective...Love yinz!

The last time I fished out of Seward, we stopped for Black Rockfish, after a couple minutes there was a whole school on the surface taking the herring the second it hit the water. The sea looked as if it was boiling. They are ravenous creatures. A sight to behold... and, I also took a lingcod soon after, reeling a rockfish up slowly from the bottom. The lingcod was never hooked. They grab the rockfish, and like a Pit Bull, latch on and won't let go, even when they reach the surface. Netted both and the good captain brained the lingcod with a bat and it promptly regurgitated a partially digested pink salmon.

My mouth waters every time you do your cooking segment! Some people put cheddar cheese on fish, I'm not crazy about that. But parmesan or maybe some other white cheese I think is ok. But then again, maybe some sharp cheese would be a nice contrast with a mellow tasting fish? Have you tried that?

How come you didn’t partially cooked the cod want it out of the oven then put your cheese on there so it melts and finishing cooking the fish instead of putting those cheese on there in the area that cheese is on it’s not gonna get cooked because the cheese is melted on the fish partially cook the cod bring it out before it’s done then put the cheese on or pre-warm it again and that would melt the cheese on the cot! Just an idea.

Couple tips... first...you folks should have blead your fish...you will not get that blood in the flesh...and clean the fish before fileting... Secondly...should ice those fish...the flesh won't be chalked or that milky color...often happens when improper care...Non ice or when fish warms up .... Also 'take your time fileting...hacking away while fileting leaves waste...finally.. the jowels or collers...probably 5 lbs of meat there...wasted... don't take this too hard... but...if you want to impress guests...try to take better care of these amazing tasting bottom fish.... cheers
