If these are Apalachicola Scallops they're the best in the world! We lived in FL for 30 years and we do so miss the seafood.

If you've ever had fresh shrimp that weren't dipped in the preservative solution you'll know what I'm talking about. All shrimp from large commercial operations are dipped in this nasty solution to preserve them to hit the market. It's a nasty/necessary process needing done as these vessels are out for a long time. Find mom & pop, or friends/neighbors like these folks, seafood businesses that do not chemically preserve their shrimp, you'll be amazed! Very hard to find but most locals around the docks know where to go. Just a helpful tip from your Uncle AL.

I was fortunate enough to live on Duck Key for 10 years. We could sit on our porch and easily see the Long Key bridge. Since i had a boat, i never fished from the bridges, but i was able to catch the jacks from my dock. But guess what, i never kept or cooked any. lol One of my favorite fish to eat, believe it or not, is the Grunts. I feel they are at least on par with the Yellow tails.

As one who lives near Lake Michigan, I have caught and cooked literally thousands of them in my lifetime ! My favorite way to cook them is on the bar-b. I like the lemonpepper with garlic and some butter in foil. I also soak applewood or hickory chips in water to bring out a slow smokeyness !!! Your pictures from your trip were PHENOMENAL ❤❤❤
