South Louisiana here. Just boiled a sack of the select size crawfish this past weekend. Corn, small red potatoes and smoked sausage for sides. Washed down with ice cold Yeungling.

@@fabfabber - Yeah, but I'm with her...I also don't do the "poo line." They need to watch a good Cajun Crawfish boil video and learn how to "purge" them in advance, season the water, and mix in some potatoes, corn, and sausage. Those are huge...bet those are some tough shells.

45 years ago we could catch 100s in a trap or 2 and the big macrobrachiums also in the mitchell and other gulf rivers. They had way bigger average sizes also. We would drop them in salty water while alive for a while and then cook them. The abundance was unbelievable. Then they got spread around and even boomed and busted in many dams like Tinaroo.

In New Orleans, they boil the crawfish in spices and bring a large platter to your table where you just separate the tail from the head, squeeze the end of the tail, and the meat comes out. You eat the whole tail (don't bother to separate the vein). Good, but the special treat is you squeeze the head while you suck the juices out of it! Life doesn't get any better! Here in Florida, you can buy crawfish, shrimp, and crab boil in a bag containing brown mustard seed, coriander seed, red pepper, dill seed, bay leaf, and allspice. You add the bag to the water pot along with some lemon, salt, and cayenne pepper. If you like it hot, get it to a boil and add the crawfish for only 2 minutes. Excellent! Our crawfish are much smaller than your red claws and would take some more time. Most crawfish and shrimp can get tough if you overcook them; I error on the side of undercooking them rather than overcooking them. Great set-up you have there!

Over here in the states we don't remove the "vein" we eat the poop shoot and all. suck out the fat and guts too from the crayfish/crawfish/crawdads and mud Bugs ... but we season the boiling water with good Ol' Old Bay (originated here in Maryland) and some other seasonings. sometimes steam them like crabs. but crayfish are a bigger deal in the south. we here love our crabs!!! the shellfish kind :)

On the tales pinch them together it will crack the inner lining then peel open makes it a lot easier and if you cook them just tails. If you crack the centre flipper side to side gently you can pull the pool line out intact.

Awesome catch! You might want to try making your own seafood dip. Simple, we use a good mayonnaise like Hellmans, then just add a little hot sauce like Sriracha, or Red Rooster to taste. Its our prawn dip on Vancouver Island prawns. Happy Trails to you both.

Hey guys, just lucked onto your channel and I’ll certainly be doing some binging to catch up. I grew up in country NSW, so we have a different species and we call them Yabbie or Yabbies. They have bigger nippers. The best way to cook them is to break off the nippers and the tail then grab the centre fin on the end and twist 180 degrees then pull the poo chute right out. By doing this you’ll fit a lot more into your pot which we’ll add a cup of brown sugar and tablespoon of salt in large boiling pot. Quantities to suit amount of water. This really helps to rid the muddy taste. Enjoy!

We do crawfish here in South Texas. We buy them by the sack. A good boii consists of a couple big sacks of crawfish. I usaully eat 19 pounds or more.

In Louisiana they boil the mudbugs "gray fish" in trashcans with potatoes, onions, corn on the cob etc with Cajun seasoning! When it's all done it's poured onto the outdoor table and dig in! Cajuns suck the head first and then go for the tail! Lol Great eats for sure!

Crawfish bud, and no to the trashcans lol, we boil in 80-150qt aluminum pots normally, not all of us "suck the head" lol. your actually just sucking the seasoned juice from the cavity you seperated from the tail.

Give roast lamb/mutton fat a go native fish love it and another trick is sunlight soap , don't know why, but those little buggers love it and possibly roast beef fat which is used in some soaps or tallow etc you'll get something tasty for sure. Hmm yeah I'm an old dog with new tricks and crocks are good eating as well, if you get desperate pick a small one for kebabs . Cheers Youngsters

Try cooking the yabbies in salted water with can of beer and some dill. Boil them up and let them cool in the cooking brine until luke warm, the go for them-- ssooo yummy

Do ya not have to purge them by ya Cook them? Over here in N.E. Texas we throw em in a a tub of salt water, cleans them out real good then cook em. Maybe different species idk . I Don't know that much about crayfish I reckon.
