I’m trying to find a real difference OR reason to get the 11’6 board so maybe you can clear that one up. I’m 5’9, relatively new to paddle boarding but picked it up real quick, not planning on racing so it’s more of a recreational thing. Do you see any real benefit to getting the 11’6 over the 10’6?

The 11'6 is my preferred board between the two. It tracks much better than the 10'6 making it easier to paddle any longer distances, but it is still very stable. The 10'6 is better if you want more maneuverability rather than tracking performance.

Is it easy to attach 2 inflatable seats for tandem kayak?

There are plenty of D-rings to attach two seats, but you may not have enough leg room for two adults. Fore that you'll want a longer (11'6") board.
