My boss at the Shakespeare Distillery gave me the opportunity to develop my very own gin recipe in the gin school, which was very exciting for me. Mango Mulberry Gin Recipe
7cm Dried Mango (7.45g)
1/2tsp Ground Almond
30g Juniper Berries
2g Coriander Seeds
2 Pink Peppercorns
0.75g Angelica Root
3mm Vanilla Bean
5 Dried Mulberries (3.22g)
2 Pieces of Dried Orange Peel (0.24g)
1 Piece of Dried Lemon Peel (0.1g)

Lots of fun experimentation going on there! I am most excited to make my own gin style that is difficult to get in Canada. Specifically, a London Dry with a bigger juniper hit than what is available (Junipero Gin style) at a higher abv; possibly navy strength. I recently did a comparison of Beefeater at 46% and 40%; the 46% really punched up my Negroni. There is a serious lack of basic gin with a big juniper hit and high abv that is needed to stand out in some cocktails. All the new (and overpriced) gins being put out right now are too 'new world' and experimental. I just want an affordable, big bold gin. Surely I am not the only one?

I wanted to suggest something for your next gin recipe. I tried fresh tarragon (or as some call it, esragon) and it took the recipe to the next level!

difficult to get mulberrys in Nova Scotia, but I will give it a try, albeit modified. Ill let you know my results!

Give Citra hops a go. I've been using them a lot in what will be one of our launch Gins. The blueberry might be better extracted in the vapour path.

It is a small 2L alembic copper pot still. I think the brand is called Al-ambiq if you want to check it out online.

Really like the videos as usual. I had to laugh that if it was any good then Simon wouldn’t have let you share the recipe. Does that mean, what you show in how to videos are only going to be so so recipes 😂

I’m pretty sure I have that exact same hoodie, not that I’ve ever got to wear it, my wife is usually curled up in it. Have you experimented with vapour infused botanicals? Don’t know how you would manage it with your big industrial still, but the copper alembics you put them in a muslin bag and feed the tie string down the spout so they are tucked up towards the column out of the wash and secure them at the spigot. Works especially well with dried citrus fruits and berries.

Not experimented with it per se, but I have helped make some gin recipes where some of the botanicals are vapour infused.

Great vid. Ive found that less is more. Like I am an expert. But I stick with a core gin ingredients and then add 1 or 2 things depending on the flavour or smell I am after. Your changing at least 5 each time and their amounts. Ive not liked a gin yet that's got a mass of ingredients in, gets far too confusing and soapy.

I am trying to make some tea flavoured spirits, but admitedly not with gin, I am going to use neutral spirit. I have tried a few tea flavoured spirits before that were really good, so I think you should keep trying. :) Also, where do you get the mini still from to do your test batches?

That vita vlt lemon ice tea branding is sooo close to Lipton lemon ice tea. Are they the same brand? Lays/walkers lynx/axe?

No, it's a totally different flavour. I found the vlt in Sainsbury's and Morrisons though.

Brand: The Spiceworks on Amazon delivery Tons of spices you’ve never hear of to experiment with (and your competition haven’t either)

Simon: Buy one of everything you don’t know, if it costs you £100 and you only find one unique flavour that works in a future blend you have a niche product your competitors will have difficulty replicating. Guarantee you’ll find more than one! And if you do me and my wife get a distillery tour (after lockdown, with plenty of notice and assuming I actually find myself down in Avon)
