That’s actually a very simple way to get the thin strips like he desired for this dish. A sharp knife, and practice. That’s all you need.

Gingko nuts are my favorite... shitakes and kombu have also become my favorite for making vegan broths. I luv this man's dedication with carving out his own healthy lifestyle.

That nut cracking tool reminded me of my grandfather using a similar tool for cracking betel nuts for making 'masala pan' :)
