Transport yourself to Italy with this delicious bolognese sauce. It can be used on pasta, gnocchi, lasagne, or even spread on a slice of bread! Buon appetito and thank you for watching! 🍝
Ingredients:
1/4 cup butter
1/4 cup extra virgin olive oil
1 onion
1 carrot
1 stalk celery
1 1/2 lbs beef, veal & pork, chopped
1 cup wine
28 oz can whole Italian peeled tomatoes, pureed
2 cups beef broth
salt & freshly grated nutmeg
1 cup heavy cream

Hi Giovanna, I am a Grandmother from Finland and I absolutely adore Your skills,I think that I have seen all Your episodes. And the music sends me back to my youth when I was a young student in medicine and visited Cicily in 1979! Bolognese Sauce holds a special place in my heart because when I was a child of about 7 or 8 (I'm 54 now) I happened to see a TV chef prepare it on a show on PBS. I don't recall who or which. It looked like the most delicious thing I'd ever seen and showed it to my grandmother. She was tickled by my enthusiasm so she got the ingredients and together we made a batch. It's one of my favorite childhood memories.

@@GiovannaBelliaLaMarca I want to say it was Jeff Smith on The Frugal Gourmet but I really can't be certain. I just know I watched a lot of that show as a kid. It's too bad his career ended in disgrace. I liked many of his recipes.

Hello Giovanna, What a huge smile I had watching to use new kitchen tools & then you made me laugh a loud when you used your wristwatch to tell Siri to set the timer!! I laughed because I don’t like using new tool or gadgets when I’m fine with what I already have, but I do think there’s always a great new item that’s worth trying!! I like to watch you because you’re a very soothing presenter! I think anyone who needs to learn to cook will definitely put up many great recipes & tips from your show. I have always loved cooking because I totally enjoyed being in the kitchen with my grandmother & mom - since I was young!

Thank you for rinsing your containers with water and adding it to sauce! My pet peeve, watching a chef add a mixture to a pot and leaving a goodly amount still in a blender, bowl or can.

Hi Giovanna from California! Thank you so much for this recipe! I’m 65 and I just used an immersion blender for the first time last week making cream of potato soup. The immersion blender almost got away from me! I almost prefer my old school way of mashing w/potato masher, all tho the blender was much faster. MERRY CHRISTMAS to you and yours and thank you again.

Hello Giovanna, how I simply adore everything Italian. It takes me 2 days to make my lasagna, and the bolognese sauce I make is similar to yours, except I grate the carrot, and also add a diced capsicum. I use red wine. Have never added cream. I’ll try it😀my freshly grated nutmeg goes into my bechmel sauce. However I understand also cooking with meat. It enhances the flavor. Thank you so much for sharing your knowledge and love of cooking. Italy is so beautiful, the food is so incredibly good. The people i met were so friendly and generous. The scenery is very breath taking. I sure miss Gaeta. I met many wonderful people there. I tried my first real pizza. So much tastier than American pizza. My friend who is from Italy said its in the preparation and the way the veggies are grown. He imports his tomatoes from Italy for his dishes. His brother will say manger! Manger! I tell him i cannot i am enjoying the flavors, and my imaginary journey back to Italy. I did have my eyes closed, and i will say, they found this amusing and thought i was asleep 😂

Hello, Giovanna. I happened upon your channel a short while ago and have been somewhat binge watching all your videos! I enjoy the way you talk and teach as you go. Growing up, my dad always talked about a neighbor that lived in his small coal mining town in WV. A very nice Italian lady who made the most amazing food. I always wished I had an Italian neighbor who would let me hang out in her kitchen and learn how to make everything and who would tell me stories. Now I'm at retirement age and I still wish that! BTW, I use my immersion blender and meat chopper all the time. I like my ground meat to not have chunks. If I want meat chunks, I make meatballs, LOL! I especially love when you set the table and sit down with your husband. Bless you.

I love watching you cook. It reminds me of when I would watch and learn how to cook and bake from my full blooded Sicilian grandmother and mother. Grandma was the youngest of 13 kids in a prominent Sicilian family in Dorchester (Boston) Mass. . My personal version is very similar. I use a bit less tomato, and even sometimes only a bit of concentrate (I try to keed the flavour of the meat front and centre). At the end I use milk instead of cream, and for spices, I use pepper instead of nutmeg. Great recipe, I love it!

There is something so reassuring watching an experienced senior sharing her cooking skills and adding small vignettes of her life story as she cooks. Enough with those Tik Toks who try to show you Bolognese sauce in 30 seconds. This recipe is not something that can be rushed and Giovanna is such a delight to listen to. Hi Giovanna. I have recently found you by chance and subscribed right away. I love Italian food .being Maltese our food is very similar and we as Maltese have adopted and copied a lot of Italian cooking. Watching Italian television since I was a child have made me very familiar to italian food and costumes which I really like. Unfortunatly Although we are very close to Italy I have only visited Sicilia a couple of times and naples once but one day I wish to go further up north. Love your channel Giovanna. I make my bolognese a little different. I add whole milk first before the wine and let it absorb then I add red wine then the tomato sauce. I love that meat separator tool, does the job.

We get to go to Bologna about once a year, as part of Terri's job. (Her company has an important engineering location there.) Last time we went, we got to make Bolognese sauce -- so yummy! _"My grandson loves it"_ I have never met anyone that doesn't love a good bolognese sauce and if they said they didn't I'd assume they are joking. I've been tweaking mine for at least a year, then I found the official Bologna recipe and made that... yep, that's more like it and it's pretty much the quantities used in this video too! The Italian Nonna's know what they are doing and in my opinion they are the highest authority when it comes to how this sauce should be made!

Loved the video, very calm and relaxed. Officially there is no tomato in bolognese sauce and in stead of cream there is milk. What you made is more of a ragu, but i think this is done all over the world. Even the italians don't agree.

Thank you Giovanna. I really enjoy your videos. I am a retired chef and love seeing all you do. I just returned from Bologna and had this sauce several times on home made pasta and gnocchi. It was wonderful at each restaurant. Although I have too many kitchen gadgets, I found that masher you used on the meat to be a good idea. What is it called exactly and who makes it? Xo

I'm thrilled to have a Chef in the audience! I came across that black tool on Amazon, just describe it and it will turn up. It really works well to separate the chopped meat!

I have one of those meat seperators things at home! What your doing is completely correct! Sometimes what I like to do is to like stamp down and then spin it like 90 degrees just to seperate the meat a bit more

I am happy to report that my empty San Marzano can is securely placed by my cook top with at least 1 wooden spoon it it at all times. The bolognese sauce was delicious! Thank you for the video.

I absolutely love your videos, I know the immersion blender is quicker and easier, but your potato masher or by hand is so much better. The blender adds air to the sauce and changes the consistency. I stick to the traditional ways with you. By the way, the meat masher is fantastic. I have that same one. That was a quick Bolognese 90 minutes.
