This mouthwatering recipe has been a hit with our dinner guests for years, and it was lovingly passed down to us by our dear friend, Josephine Schininá Lissandrello. My husband Howard and our granddogs Pupcake and Pom Pom are featured in today's video!
Ingredients:
Non-stick spray for the pans
2-3 eggplants, sliced
Coarse salt (as needed)
Vegetable oil or olive oil (for frying the eggplant slices)
1/2 cup plain breadcrumbs, divided to coat the bottoms of two pans
2/3 cup of simple tomato sauce (recipe included below)
2/3 cup freshly grated Caciocavallo Ragusano cheese, divided in 2
Simple Tomato Sauce:
1/4 cup Extra Virgin Olive Oil
2 cloves fresh garlic, chopped
Sprigs of fresh basil, chopped
Salt and pepper to taste

I made your egg plant dish right after watching this video. It was absolutely delicious. I am taking care of an elderly lady and she didn’t want to eat. I put some on a dish and acted like I was going to eat it and offered her a bite, she couldn’t resist especially after the first bite. I told her it was egg plant Parmesan she said I love egg plant and this is the best one I’ve ever had! It was really delicious. That’s all I ate for dinner. Thank you for sharing.

Looks nice but you said the bottom of the pan would be the presentation side but then you did the opposite, so maybe next time put presentation side on top in the pan. Covered with breadcrumbs though it hardly seems to matter.

I'm Irish and was adopted into an Italian family, and they all cooked homeade Italian staples all the time. My grandfather owned a fruit company and had his own garden at home with some pear and peach trees. Italian food is my #1 favorite food and always will be. !! Ate a Mediterranean diet my whole life, I'm so absolutely grateful. 🙏 Once in a while tacos sound good, but Italian food is the best food in the world. We ate alot of fish, olive oils as well as homeades...I must've Italian in a previous lifetime !!❤😊 Love biscotti, ricotta cake, Italian cookies..what I liked best was that they weren't overly sweet !! My mother was Sicilian, but she and the whole family decided to go to Brazil, to the city of São Paulo, where I was born. My mother was an excellent cook, we even thought about opening a restaurant in Brazil, but unfortunately she became ill. Our house was more Italian than Brazilian, and watching your videos, I remembered the wonderful childhood I lived. I loved the channel!

​@@GiovannaBelliaLaMarca Yes yes Giovanna! I am lucky to have been born with a really developed sense of smell and I thus avoided some small domestic disasters in my childhood 😂. I was the 1st one, in the family, to detect suspicious smells in the kitchen for example 😅. Of course my olfactory memory is linked to many emotions who last all the life long, and even at 60 years old, I can be surprised by a new rising memory! Kisses from France! 🇨🇵❤

Fortunately, eggplant is not a seasonal vegetable, so, we can enjoy it anytime! PupCake the Toy Poodle and Pom Pom the Standard Poodle are our beloved Granddogs, and they are marvelous compagnions and playmates to our whole family!

Absolutely delicious! My mother's family came from Polizzi Generosa in the center of Sicilia and make something similar but just like this: fry the eggplant as you did, layer each layer with tomato sauce, fresh basil leaves and a sprinkling of pecorino romano. Allow to cool and chill in tge refrigerator. This makes a delicious sandwich on crusty Italian bread.

This is so wholesome and sweet. And I can feel your passion for your culture and for cooking. It feels like learning to cook from my grandma. Unfortunately, my grandma has already passed. But, I treasure things like this that give me a boost of serotonin. This is a new favorite channel of mine, I can already tell. Subscribed and hope to see more! Cute poodle, also. 😊 One thing I'd like to add, is salt actually counters the taste of bitterness. So, it would be good to reapply it to counteract any remaining astringent qualities. It's the same reason bartenders often rim the glasses of certain cocktails. It cuts the sharp bitterness of the ethanol. It also acts to naturally enhance the flavors of whatever it is on. But, you could probably just use regular table salt for these purposes. Kosher could be too coarse in the final product. Also, I love how it is actually a savory dish, but when I saw the thumbnail it looked like chocolate cake. I don't know how you coaxed that color out, but it is stunning!

I don’t peel the eggplant, and that accounts for the richness of the color. Salt is the best flavor enhancer and I use coarse Kosher salt because I measure it with my fingers. Then, serving this particular dish in a footed cake platter makes a super-de- Luxe presentation!

I adore eggplant and when I fry it, I usually eat most of it just plain fried so I get the yummy flavor. My mother came from Italy after WW2 and also made her eggplant the same way except she baked hers. So delicious. My prized possessions from her kitchen are her handwritten recipes a few pans and her rolling pin. She was a wonderful cook and a kind lady. I miss her so. Grazie.

Just discovered you this week. I ordered your cookbook and decided the first thing I would make was the Rabbit/Chicken Stew with capers and vinegar (I did chicken). My Grandmother was from Augusta and I never remember her leaving the kitchen while I grew up in her home near Boston. She used to make a stew that sounded similar so I decided "why not?" Now I'm sitting here with tears in my eyes remembering her kitchen while I eat a whole bowl. Thank you so much for that.

What a lovely way to present fried eggplant. I appreciate your mention that cooking uses all senses. Learning to smell and listen to food as it cooks is such an important skill, so much more useful than relying blindly on an arbitrary time. You are an excellent teacher. I also love that you have your pan, still in good condition after five decades. It is depressing to watch people using non stick pans over very high heat, then saying that non stick doesn’t last! So happy to have stumbled upon your channel!

Watched this video at work in October, came home and told my girlfriend about it and at Christmas I opened a wonderful nonstick frittata pan. Now it’s January and we are watching this video and making the layered eggplant. ¡Mangiamo!
