You can also freeze tomato paste in ice cube trays. That way you can buy it in the bigger tins and it won’t get moldy! Less packaging- longer “shelf”life 😇

Do you ever stop and take in the beauty where you live? I'm in America...specifically and unfortunately in Florida....and I cannot imagine my everyday surroundings being so walkable and beautiful. If I walk for 30 minutes here, I am still nowhere near a store. Our architecture is flimsy and modern in the most boring sense. The buildings you filmed were incredible! I know it would not fix all my issues to be there, but having that as my surroundings everyday would be so healing and fresh.

i’m in the US as well (chicago) but i will say Denmark has been my favorite country i’ve ever been to, i’ve been twice because i love it so much. it’s extremely diff from the u.s. the culture, the cleanliness, the values, etc. it’s amazing

Our environment really does have a huge impact on our mental health 😊. I have injured my knee 😭 so I have been in bed or the sofa for days, but I usually walk along the beach, park or a different neighborhood multiple times a week, I miss going outside 😢. I can look outside my bedroom window and see massive trees and a small park across the road, it helps me feel a bit better 😊

Sweet potato idea--peel and slice into whatever shape you prefer--either round slices or cubes, doesn't matter. Coat with some extra virgin olive oil, add some salt, pepper, garlic powder, or any other spices you love and roast them in the oven. Goes really well with a dollop of sour cream. I stocked up on produce at my local farmers market this past weekend, I did get busy and chop up some of the stuff that I knew I wouldn't use up before they went bad (peppers, onions) to stick in the freezer.

I roast chopped sweet potatoes with halved brussel sprouts, granny smith (green) apples, tosses with olive oil, garlic powder, onion powder, salt & pepper.

I'm feeling very grateful that I can buy all of the veg you showed unpackaged in the supermarket in my small Australian town, as well as Barilla pasta in cardboard. Tofu, on the other hand, always in plastic, but I can't live without it.

I would wash sweet potatoes and slice them and put in the oven with potatoes, carrots and onions (+oil, salt and pepper). First day I would serve them as a side dish. After that I would make smooth soup out of them. Maybe add some curry paste in soup and you have food for few days more.

One of the parts of European living I miss most is taking my basket when I go to Netto to go shopping. It was a beautiful 20 min walk and just so peaceful. I do take it when I go to the farmers markets here but it's just not the same as Bavaria.

My mom cooks sweet potatoes in the oven. She tops them with butter, vegan in your case, cinnamon, & sugar. 😊

I like making sweet potato mash and while you mash them from still being warm, melt in a small cube of vegan butter and put in cut andive. Buuut I think some cooked broccoli could also work, or use it as the base and put roasted broccolini on top. Or roasted sweet potatoe cubes with white beans or any bean in a salad with peanut dressing.

There’s sweet potato, chard and peanut stew on the BBC goodfood site which I love (and you can swap out any leafy green for the chard.) I also like the japanese thing where you simmer slices of sweet potato in water, lemon and sugar as a sweet snack.

I love making a fried fritter out of shredded sweet potato, shallot, dill, flour, and egg/egg substitute. Salt the sweet potatoes and squeeze the excess moisture out before mixing with your other ingredients to make super crispy fritters.

I mostly shop with "Stop Spild Lokalt Aarhus." For 35kr, I fill a bag with all sorts of beautiful organic produce, etc. while saving it from the trash. It's also a bit of an adventure/treasure hunt because I never know what they'll have.

I recommend making sweet potato fries, they are very delicious and you can easily make a vegan aioli to dip them in :) Please let me know if the ice cream was any good. I am looking for tasty vegan ice cream but am struggling to find good ones

So this is something I like to do with sweet potatoes….make them normally like you would a regular potato. Mash them up and mix in black lentils, cherry tomatoes and tahini sauce

My potatos actually last waaaaayyy longer in the fridge. I saw a test of different storing methods for potatos on TV and they were surprised that the fridge badge was kept fresh the longest.

For the sweet potato I do a veggie roast, with sweet potato, onions, chickpeas, broccoli, and any other veggies I have around. Season with salt, pepper, dill, and paprika. 😋😋 So so good & filling

As a fellow mid-northern European I kinda find it hard to come up with recipes for sweet potatoes as they weren't available during my childhood and youth. Of course there are many recipes readily available now but sweet potatoes are just not included as staple foods in my head as for example normal potatoes are. Most often I just throw them in the oven with other vegetables and a bit of oil and salt to eat them with a dip.

I've never actually seen a sunchoke. Interesting. I think they can be grown where I am, but I'm not aware of anyone who does. For the sweet potatoes, definitely fries/chips, or chips/crisps (US/UK terms). I'm not sure how to swing it under vegan rules, but there's a sweet potato casserole which uses brown sugar (which carmelizes along with sugars in the potatoes), butter, and some folks add mini marshmallows (I don't like marshmallows so I skip those), cooks up in an oven. It's usually a fall/Thanksgiving timeframe dish on the east coast US that's personally a yearly staple.

What I use with unused tomato paste..... I take a dollop on a plate and freeze them. Then I take them off the plate and put them in my silicone bag.
