To smooth out the edges is there a tool like something to sand the edge?

Not sure I quite got the purpose of tapping the underside of the glass with the metal tool on the third go...? Great video though, very interesting!

I'm no expert, but I do work with glass, so here's my educated guess. The score creates stress, but in curved sections (from other cut curved sections) the stress may not contain the final break, so tapping the underside along the score increases the steress along that score with tiny fractures. The pliers send the final amount of stress along that score that has been weakened further, so the break doesn't reach into the desired piece.

I'd hope for better from a Corning video. This is amateur. You've got a square there but draw a line and then try to cut a straight line freehand. All of those cuts could be broken out by hand. Your tapping is just random bashing of the underside of the glass on a score that doesn't even need encouragement to break out. To top it off you're using your grozing pliers upside down at the end
