Wait! I know if you are in North America, you’re saying “No way, not corn ice cream!”. But. Yes. Sweet Corn ice cream is really good… well at least Glen thinks so, Julie isn’t so sure. This is an ice cream flavour popular in Asia, and we came across it this summer when visiting family in Little Rock. So Glen thought he’d give a Sweet Corn Ice Cream Recipe a go.
Ingredients:
500 mL (2 cups) frozen sweet corn
500 mL (2 cups) 35% whipping cream
250 mL (1 cup) 3% milk
150g (⅔ cup) sugar
10 mL (2 tsp) pure vanilla extract
5 large egg yolks
Method:
Place the corn in a blender with the milk and blend thoroughly.
You want to fully liquify the corn.
In a medium saucepan whisk together the milk / corn mixture and the heavy cream.
Bring it just to a simmer, stir, and then remove from the heat.
In a medium bowl, whisk together the yolks and the sugar.
Whisking constantly, temper the egg yolks with some of the hot cream.
Whisking pour the egg mixture back into the saucepan and cook over medium heat until the mixture reaches 170ºF.
Pour custard through a sieve into a bowl, and whisk in the vanilla.
Cover and refrigerate until cold.
Freeze in an ice-cream maker according to manufacturer's instructions.
Churn until frozen, transfer to an airtight container and put in freezer to harden.

I've never made ice cream before, but these videos have me getting really close to giving it a try. I'll try checking out a cheap option for the machine and then decide whether to give it a go.

If you sous vide the corn and you dry it in a low oven you will get a much better texture and color. Also I think you have to pass it through a strainer to get rid of the corn skin; Never tried corn ice cream before but it will probably go well with brown caramel and salty peanuts. I'll try it tomorrow.

The written instructions that we've put with the recipe recommend straining - I tried it without straining, just because I like to try things. Not sure that a cook in by sous - vide would do anything, but we have made this since where we roasted the corn (just like we do with our cherry ice cream) and we had a creamier texture because we drove off much of the water from the corn.

This was a favourite flavour of mine when I lived in the Philippines. Other favourites were coconut, red bean, ginger, green tea, ube (purple yam), queso (cheese), and combination of ube/queso/pastillias (sort of a conensed milk candy with milk powder and butter).

I lived in Little Rock for nearly 20 years after graduating college and I’ve never came across sweet corn ice cream we freeze a lot of corn in our freezer durning the summer months so we have a lot of sweet summer corn for the colder months when fresh sweet corn is out of season.

For a smoother ice cream, next time try using a fine mesh strainer. Totally worth it.

I wonder if salting and roasting the corn first would help with the flavor profile and getting some of the water out of it

Another great one. Thanks for the upload. If I may suggest, you could try to make ice cream with salep, orchid root, and mastic powder. Here in Greece it’s called kaimaki (ka we ma kee) and in turkey it’s called dondurma. The root produces an elastic ice cream and that characteristic mastic flavor makes it unforgettable! We make it all summer each summer. And no eggs required, so it’s foolproof

We've been looking into it - We have a bit of trouble getting quality salep (or any salep) here in Canada. Saw some on Amazon, but we weren't sure if it was the right stuff.

It must be sugar free and without anything added to it. Just the root powder and then you and mastic powder. The one I saw on amazon.ca is a ready to drink powder with all these added in it. Not suggested for ice cream making but it’s good for tasting it to see if it’s your cup of coffee. It’s a Greek product that I’ve personally tasted and it’s good for what it is. I could send you some if you wish, but I don’t know if it will go through customs and all that

What would happen if you added 1½ tsp of vodka to the mix? I wonder if that would mitigate the ice crystals.

Try blending some freeze dried corn into a powder next time for a really concentrated sweet corn flavor without upping the water content!
