Thank you Denise. I sometimes do use a large rollling pin and gently roll the fabric out of the mat. It only works on some designs. On really intricate designs it tends to rip them.

Chef Alan, I am decorating a wedding cake but not making it. It will be finished in a crusting buttercream and the bride has requested lace and sugar flowers…all of which I have made. In researching lace and buttercream I came across your wonderful tutorial. My dilemma is that the buttercream will probably have crusted before I receive the cake. Is there any way to attach this lace? Or do I need to recreate it in royal icing? I was thinking maybe using buttercream in dots on the back of the lace as “glue” might work. Hi there!! I'm doing lace around 4 tiers of cake and will have to use the same mat over and over. Of course I want to make it ahead by at least a few days. How far in advance can it be made to still stay flexible and how should I store each finished piece until I apply it to the cakes? THANKS!!! I have your mat and your Chef Alan brand mix ready to go!

The lace can be stored for several months in a tight plastic bag to prevent drying out. In very humid conditions, the lace will stick to itself and be very limp and hard to work with. I would strongly suggest you make a test piece of lace ( just fill in a small portion of the mat) well before the wedding. This will give you an idea of how long it takes to dry the lace. Once it is dried and removed from the mat, you can store it. You should then apply this to a dummy cake covered in fondant and let it stand out on the counter for a few days to see how well it holds up. Pearlized lace handles differently than regular lace, regardless of the brand of mix you use. As long as I have been making cakes, I never try a new technique or product on any wedding cake without first testing the product. This insures I know how to handle it in the weather conditions in my region.

Thanks so much! I actually did a test run using this mat and your mix back in December. I did a 6" buttercream cake with just the front half of it covered in one strip of lace and practiced placing some of my sugar flowers. The laced worked so great and I was pleased that you can just cut right through it when slicing the cake. Since then, the plan changed a bit and I'll be covering the cake with fondant but I'm going to assume that if I was happy with how the lace worked out for me, I should be okay without practicing directly on fondant. Working backwards regarding the schedule, I'll be delivering the stacked cake at 4:30 Saturday afternoon (in a few weeks). My plan is to panel fondant on the cakes on Friday and chill overnight and then in the morning I'll stack and place the lace and do the beginnings of flower placement, finishing up at the venue so there aren't petals and leave bumping on each other during the drive. Does all that sound about right?? THANKS again! I've learned so much from you and appreciate your quick responses!

Good planning Ruth. Be sure to let the cake come to room temperature before gluing on the lace. Condensation could cause the lace to fall off. Also, depending on where you live, your lace may have dried quicker in December than it will now. For instance, I live up north near the Canadian border. Three days ago is was 28 degrees and my lace was drying in 3 hours without even using the oven. Today it is 60 degrees ( finally Spring has arrived) and my lace took over 8 hours to dry. The humidity in my test kitchen went up 20% in one day with the heat being off.

GlobalSugarArt so do you think I should make the lace in the next week to be sure it all goes right and just keep them in Ziploc bags for the remaining week or two? I am very happy to get as many things done early as possible. From what you said in the video, maybe I check the lace a few days before so if there's anything wrong with it I can hydrate it or redo. When I put them in the bags initially, can they be rolled loosely, since they won't fit if kept flat?

Yes, it will keep a long time in a ziplock bag. The lace can be gently folded and placed in the bag. If you check it and feel it is getting a little dry, just add in a few damp cotton balls or piece of paper towel. Be careful not to add too much humidity to the bag at any one time. I have kept lace this way for months!

I made lace for my best friends birthday cake last year and the lace dried out before I could get to use it. Since it was my first time making lace, and I'd put (almost literally) blood sweat and tears into making that lace, I used the steamer I use to set the color on gumpaste flowers to steam the lace. Since I also didn't know about the trick of mixing the color powder with alcohol, I used a dry brush and brushed the color the way you color flowers (I learned a lot making that cake! LOL) As a result, not only did I rehydrate the lace, I set the color on it as well. If you'd made this video a year ago, I sure would have loved having your expertise, but I wouldn't have learned as much! I love your lace, and especially putting the ribbon on the cake behind the lace! I saw where you had the lace in the ziplock bag, could I wrap my lace in parchment paper before storing it in the plastic bag?

I live in Florida and I will be taking the lace to Ohio to put on a Communion cake that I will be making out there my question is can I fold the lace in half and place it in a ziplock bag? Yes, you can absolutely lightly fold or roll the lace in a plastic wrap, parchment paper or wax paper. Measure the circumference of your cake and divide by the length of your lace strips to determine how many you need. Simple math.
