Gluten Free Fruit Cake/Christmas Cake
Yield : 2( 8 inch cakes)
Wet ingredients
1 cup prunes
1 cup dates
1 cup raisins
1/2 cup cranberry
1 cup rum
3 cups fruit wine
8 oz butter
1 cup marmalade
4 eggs
Spices
1 tbsp lemon juice
1 tbsp vanilla
1 tbsp almond
2 tsp rose water
2 ts lemon zest
1/4 cup browning
2 tsp cinnamon powder
1 tsp nutmeg mase
2 tsp grated nutmeg
Dry ingredients
2 cups oats flour
1 cup almond flour
1 cup coconut flour
3 tsp baking powder
1/2 tsp baking soda
Procedure
1. Place prunes, dates,raisins, cranberry, rum, marmalade and wine in a food processor and chop to desired consistency.
2. Cream butter until light and fluffy. Add eggs one at a time . Mix to combine . Add spices ,chopped fruits and browning. Mix to combine
3. In a separate bowl combine all the dry ingredients .
4. Using a wooden spoon fold the dry ingredients in the fruit mixture.
5. Pour cake batter into 2 8inch grease and lined cake pans. Bake at 325F for 40 to 50 Minutes
