I made two mini loaves yesterday and shared a loaf with my adult daughters. They are always looking for healthy treats to take to work. I lightly toasted a slice this morning and it was really good. I did make a couple of changes. I added fresh blueberries and brown sugar instead of honey and a fourth cup oat bran as part of the flour. I Included about 4oz of maple yogurt in with 4oz of milk to soak the oats. Storing it in the fridge made it easier to slice with a serrated knife to keep it from crumbling. . Next time I make it I am going to add chopped dates. Thank you for sharing! PS: I make my own oat flour by grinding old fashioned oats in the food processor.

Oh yeah! But sometimes the dried fruit can be too dry. So you need to make adjustments if needed

Your bread looks great! Have recently begun baking with oat flour and have found that adding a tablespoon of cornstarch per cup of oat flour helps to make the baked batter less crumbly. Just thought I'd pass that on in case any others may wish to give it a try. Thank you for your good tutorial.

I will have to try that. By adding the old fashioned oats give it a bit more structure. I have also added Flax meal that will also give that missing structure

This is a good recipe for people who have problem with gluten, we have one kid in the family who suffer from that. . I never tried honey oat bread but I do bake banana oat bread with nutella 😅

Yes Bob's Red Mill products are very good, i buy the old fashioned oats gluten-free all the time to make pancakes, you have to grind the oats..

Toasting is not required but does add to the flavor. Toasting could be done a day or even a week prior to baking.

Nice recipe , just made it. But since I was not really insistent on it being gluten free , I lessened the oat flour by 1/4 cup & add 1/4 cup plain flour instead. Thank you for the recipe 👍

I used an 8 inch loaf pan you can use other sized pans but start checking the bread after 40 to 45 minutes. Btw I have a gluten free banana bread also on my channel.

What's the reason for not adding eggs? Most negative information (ie cholesterol) is 100% false, but, get TRUE free-range eggs that feed from being out, not couped up

@@roberthart9886 You could also throw in that eggs are a major allergen. There are quite a few people that cannot have them and this recipe complies with that dietary restriction. Plus It really doesn't need the eggs!

@@terryshampoe As to allergens, I doubt it, BUT, my personal experience with commercial milk vs organic unpasteurized milk is evidence it has more to do with commercial (highly processed) vs organic. Others have a similar experience to mine

@@roberthart9886 There are people who cannot eat eggs due to allergies or intolerances. I am intolerant to both egg yolks and egg whites. If I happen to eat an item (for example a piece of bread or a muffin) which contains eggs I have a reaction within 30 to 40 minutes. And it can take at least a week to flush the egg protein out of my system.

Not overly sweet. I don't really care for too much sweetness and I think this is just right. Enough sweetness to tell you it is sweet but no so much you would want it for dessert.

Just to rectify that the oat originally is not glutten free. Though , its glutten is not as bad as the wheat flour . The wheat flour is seriously bad for the human well being .

You have to be careful when converting a recipe. You have to factor in the added liquid. You also have to factor in that honey is more acidic. Most honeys have a PH of 3.9. This can throw off your leavening. Either by adding in more baking soda and/or by increasing the acidity by using buttermilk. Also since honey is sweeter than sugar you have to factor in that you will be using less honey than you would sugar. It can be done.
