Gluten Free Sourdough Muffins | Testing out a new recipe and some life updates!

Let me know what you all think about me branching out a bit over here. I prefer not to start an entire new channel to dedicate to life outside baby wearing. I still want to have a focus on demos and tutorials here, but also have the opportunity to share more about what does and doesn't work for us in general!
I am on a decluttering journey currently. I actually joined the ‪@TheMinimalMom‬ group for support and have been blown away and how motivating it really has been. in the past 9 days I've decluttered over 2000 items and it's already making a huge impact on our home.
One area I am working on is using up some of the baking flours that we have stored. having more of a limited range of options when it comes to food has led me to borderline hoarding food that works for me and my family. I know some of those options are going to go bad if they aren't used up, so I am trying new things and trying to really concentrate on making everything from scratch at home.
I have always loved the idea of sourdough options and have done a rice sourdough before. It went really well in the past and I wanted to try it again. I am noticing that it might not be perfect with my stomach, but it's also likely that it's just stress sending me into a flare-up. between an upcoming kitchen renovation and new flooring going in, there is a bit of stress here.
I also wanted to use up our food to save money. Aside from money going down the drain with the food waste, food has gotten so expensive And we are trying to cut down our budget wherever possible for this renovation. That means buying as little as possible across the board, including food. making things hear from scratch is a far cheaper than eating out or getting prepackaged allergy friendly food.
We've been making our own cashew and oat milk along with other plant-based milks. Let me know if you want to see any of those!
