I tried it. WOW SOOOO GOOD! I don't know how you make gluten free flour into something so moist.

3 to 4 overly ripe bananas 1/3 c melted butter, 3/4 c sugar( I used Splenda blend) 1tps. Banana extract 1 egg, 1 1/2 c gluten-free flour( if the flour doesn't have xanthan gum add 1 tsp) 3/4 tsp. baking power and soda and a 1/2 tsp. of salt. Mix the bananas, extract, butter, egg and sugar together then add dry ingredients. Preheat oven to 350 degrees. Grease a loaf pan add mix to pan ,bake for 50 to 60 minutes.
