Its obvious - because demos increase the chances the customers wont be tricked into buying bad games, because they can test it first. The lack of demo means no testing, so to test you have to buy the game first. The second reason is that making a demo means a little more work, that means to pay the devs a little extra and the publishers/investors dont want that because they want bigger profits. It all comes down to money.

Playstation always has a bad habit of too much bloom which causes oversaturation. Thankfully there is no such issue with god of war titles. It's tastefully done. What they did to ninja gaiden was definitely trash, the xbox versions are superior compared to sigma and sigma 2. The sigma versions have waaay too much bloom. God of war is quite perfectly done. Wonder why they can't always be consistent like this.
