the way i see it in this particular what-if is the reason goku dropped out of ultra instinct when he did was because he tried to harness the powers of a destroyer while using the powers of an angel which if memory serves is something that isnt necessarily possible, or at the very least much much more difficult to achieve, hence the concept of the gods of destruction having such a difficult time attaining ultra instinct
