The aestherics of your videos are just incredible :) and wow, those lunches look amazing. I work in an office and haven't had the time lately to prepare balanced lunches, often times I had things like overnight oats for lunch (after raw buckwheat porridge for breakie :)) which is fine but I just haven't eaten as many veggies :) so this is inspiring! The leftover roasted veg with "hummus" and the sandwich look easy enough to take to work for me

I watched this whole series, and it's great! All things I can definitely picture my family eating. All ingredients that I already have, or that are easy to find. Also, you show just how varied and versatile a whole foods diet can be. I watched these out of order, and I was sort of picturing how you used leftovers from some of the meals. I always have the best intentions to use leftovers this way, but I quite regularly fail at it. I'm going out on a limb here, and asking if you might put this in a meal plan form. I have made your pickled onions, they are super! 😀 Love this new video, although in winter time I don't eat much salads and prefer mostly soups. Adding some warming spices to dishes also can help to keep warmer. Do you notice difference when you eat salads or soups in how you feel in the wintertime? Looking forward to the dinner episode!

yay, glad you like them! I do like soups in winter but I shared more of our quick fixers in this video. We eat lots of soups in winter actually and even in the summer. I am quite a soup fan over all! There are some I feel like I need different textures, more raw veggies and chewy stuff though. For me variety is always best! :)

I've subscribed and am hooked but I have to say I am not totally oil free. 1/2 tsp olive oil in the Mediterranean salad would make me so happy and satisfied ... Hope you're staying warm and cosy in the freezing weather! I am loading up with tea and blankets as we speak. I do eat some oil, you'll notice it feature more in the dinner video. Oil is something that I personally think is okay in moderation. I use it here and there, sometimes I saute in water - sometimes in oil. I don't often use it in dressings though but I think we all have a personal responsibility for our own eating habits and we know best what our over all diet looks like. It's good,and in my opinion more important, to focus on having as many healthful foods in the diet than eliminating foods. Of course being vegan I am all for eliminating animal products, both for ethical reasons and the fact that they're not always healthful *especially not in the quantities we eat them in the West). But other than that focusing on more colours and variety of healthy whole foods seems more of a positive way of eating well to me than wrrying about including a little oil, unless one has a serious condition and need to follow a strict diet due to it. Okay that was a long answer, haha. Think it proves how complicated nutrition and approaching the health subject can be. Wishing you a lovely day!

Looks great Malin. Do you know if you hit all your nutritional needs? Just asking because I have just started using cronometer and am finding it really interesting(I've started putting on weight and thought I should check my caloric intake, but find the macro and micro details really informative).

simon thank you 😊 I use Cronometer sometimes to track my nutrient intake and did it quite consistently for a while to see if I hit my targets in a daily basis. Using the app I’ve hit my targets most days but not all. I think however it all evens out over a few days and I’ll get more if something one day and another thing the next. I think focusing on making sure I eat servings from all vegan whole food groups we do quite well in general. Making sure we eat varied as well. At the same time I like to eat mainly seasonal vegetables so I might get more of certain nutrients from different foods depending on that. I think frozen vegetables and berries especially are great in winter though to get some of those nutrient and antioxidant rich foods in when they’re out of season as well. So now I don’t count my macros or micros really - I just focus on eating servings from all the vegan whole food groups. I’m somewhat inspired by the daily dozen which I think is a good reminder to get variety. I always try to eat some green and some orange/red vegetables each day. Then I of course supplement with b12 and in the winter I also take vegan vitamin D3 as well. To be safe with omega 3 to 6 ratio I take a supplement for that once or twice a week made from algae but I don’t stress if I forget as I make sure to eat omega 3 rich foods like milled flaxseed, hemp seeds and walnuts on a regular basis. I also use fortified oat milk and like to sprinkle nutritional yeast into or on top of many dishes which add those nutrients I might be low on from Whole Foods as well. Since I eat these fortified foods pretty much daily I don’t follow the instruction on the other supplements I take but instead take less to “fill in the gaps”. That’s what I’ve come up with that seems to work for me to get a good spread of nutrients on a daily basis. Long answer, sorry about that, I hope it was interesting to you ! 😊

PS. I’m reading up more on iodine at the moment which I’ve supplemented before but am now using added iodine sea salt for my food and trying to get more sea vegetables in. That is one nutrient cronometer doesn’t seem to measure 🤔

@@GoodEatings I know a little about iodine as I have an underactive thyroid which can be caused by iodine deficiency although I have been specifically told not to supplement with it as I take Thyroxine(synthetic thyroid hormone). I believe one of the best forms of iodine is spirulina though, read somewhere recently that iodised salt is a refined product so not great, but I'm certainly no expert. Yes I'm Swedish :) Antar att jag kan skriva på svenska? :) En brukar kunna hitta näringsjäst eller bjäst på hälsokosten och på många online-hälsokostshoppar. I större städerkan det även finnas på vissa större supermarkets, I Malmö finns det på en del ICA-butiker till exempel, men det beror ju helt på var en bor. Hoppas att du får tag på det! Hi there :) I do eat some oil, as you can see more in the dinner video. However, I do try to get most of my fat sources from whole foods like nuts, seeds, olives, avocado etc I don't count my macros often but when I do I usually get within the range of what is recommended here in Sweden (25-40% energy from fat), or at least above 20% of my energy intake coming from fats which is, according to my nutrition teacher, the minimum needed to function well and stay healthy :) This whole macro ratio for optimum health is very disputed though and it seems it can be beneficial for some, as with for example heart disease patients, to eat less fat. In these times I think it's good to listen to overall health guidelines and then feel for oneself where within the spectrum we feel our best. :)

haha,sorry about that - it's just our style I guess and the fact that it's very dark where we live which inspires our lighting :)
