Big thumbs up for Heatonist. I've been enjoying some of their sauces recently (including "The Last Dab Reduxx"). They're probably my favourite sauce manufacturer although to be fair, Fireland Foods from Austria is an extremely close second. My absolute favourite insanely-hot hot sauce is "End of Sanity" from Fireland Foods, and their "Devil's Choice" - while not as hot (although still pretty scorching) - is a really good fruity one. Heatonist wins out on a having a wide variety of more complex flavours though. I could fill my cupboards with Heatonist sauces and have a great hot sauce for any kind of meal.

@@xxreidxx2362 That depends a LOT on the flavour profile of the sauce. Something like The Last Dab really won't go on anything but meat, carbs (potato/bread/pasta/rice), and a few vegetables since it has mustard and other savoury spices in it. Something like The Devil's Choice is great for fish, where you could also use The Last Dab, but it might overwhelm the fish flavour too much where The Devil's Choice would just complement it. A more basic hot sauce that is just chillis, vinegar, maybe salt, maybe sugar will go on practically anything since it's so simple. It's often a great way to improve fast food or other foods that have a basic "in your face" flavour profile without much complexity to them. The only exception is anything that vinegar will react badly with, like milk. If you want to make chilli ice-cream (which I highly recommend) for example, you should use either use fresh chillis or chilli flakes instead of a hot sauce.

The Lewellen's sauce is really good, but if you want to try more form the Caribbean Islands, try Vinita's Hot sauce. She has a wonderful story behind the sauce and her history with it and it's really good. I'm not sure if she is still making it due to Hurricane Maria, but if you can find it, TRY IT!
