What Asian and other countries consider a pudding is jello to the US, andvalso what England calls a pudding to other places is more of a dense cake, but theres nothing wrong with that. The US pudding is more of a thick dairy product. Personally I love Japanese puddings and not so much the US kinds. I like the gelatin consistency. And also I really like the British Treacle puddings, which are cake like. Maybe Australias idea of what is pudding more closely resembles Japans pudding? I am unsure.

We just have a lot of Asian immigrants in Australia, and thus lots of businesses and stores in Australia, run by Asian people that cater to this market. We think of puddings in the British sense, as in sticky toffee pudding/bread and butter pudding, or also the dairy chocolate puddings. Actually a lot of the Asian style puddings use agar agar which is seaweed, instead of gelatin, so as a vegan, I can eat the ones that don;t contain milk. I quite like them.
