Thanks, they were both great, maybe it was the fact that we rarely make a skinless product but we really enjoyed those ones we made in the cellulose casings!

what should the salt content be like for soaking the goose? should it be like a regular brine. And are your curing salts the same for goose .025%?

We had a lot of goose this year so we tried some new things, the cellulose casings were an awesome change! Also, we made Cajun cured sausage with goose as well and that was a great flavor too. The key really was using just pork fat! Made a huge difference and this is now how we are trying to do all of our bird sausage.

No, on these we did a few different batches at once so we used the ProSmoker 500T, still probably not as big as the one you use, which I assume has rails in and out?

Yes, it might not give the exact same taste but it should be in the same realm. I would guess that Turkey would be okay with a 50/50 mix of untrimmed butts but still probably better if you added 20-25% straight pork fat.
