Can anyone explain why he revs the bike up before landing?

You rev the bike to slow/stop rotation of the bike dropping forward, bring the front end up, or added acceleration after landing.

rotax hippie is correct but its also to spin the tire before it hits the ground to make accelerating as fast as possible. These guys are on the rev limiter the entire race.

Some of those (like when he lands on a table or before a big jump in the middle of the rhythm) are when he is holding in the clutch to have basically an explosion of power when he hits the ground.

Spinning the rear wheel also significantly increases the shock stiffness. You get max acceleration as soon as you touch the ground and it keeps the rear shock from blowing thru the travel.

Way too much stabilization used.. it makes it almost robotic. I'd like to see the camera bouncing around at least a little bit.

The BBQ Jerk not really. I've worn my GoPro on a supercross track and didn't use any added stabilization and it was fine. Sure I wasn't any where near this speed but it still wasn't bad at all. Even on rough outdoor tracks it's not an issue.
